This year is going to be a fun one.  I have my brother Daniel, his girlfriend and her daughter, my little brother, Patrick, my sister Deborah and my mom and step dad coming over for Christmas.  They are going to be here for three days :).  While I am very much looking forward to it I am busy… MORE

About this Cook
I'm a single mom on a very tight budget. Trying to find new and exciting meals to make the kids happy and satisfied is quite a challenge. Sometimes I just need a break and we have pigs in a blanket! I'm sure everyone has a easy to make no effort meal. Overall, I like to cook and finding new affordable recipes is my main goal.

Of course there's the holiday traditions, turkey and ham. But sometimes we like to make Sphagetti! It can simmer all day while everyone is playing and at the end of the night we fill up on pasta and homemade sauce!

French Breakfast Muffins
perfect with so many different ways to use them. Instead of topping with cinnamon and sugar you can also use these for strawberry shortcake.

Quick and Easy Alfredo Sauce
I love this recipe. It's a great sauce as is and you can add things to make it different as you want. I like using it as a gravy ontop of pork chops with onions and mushrooms added. I can't tell you how often we use this recipe.

Fruit Salad
this was a hit with my family. My son had turned the leftovers into a pie with a granola crust. I was actually surprised at how good it turned out. I added banannas to the fruit and I think next time i'm also going to add frest peaches. I like this a lot!
