Loosing "Half of Myself," without loosing my mind!

This is an impulsive jump into starting a "blog;" and using it as a way to support loosing over half of my body weight.  I so want to get healthier, and I want to encourage my family in their desire to "jump on the healthy train also."  

So, I made this dinner last night for everyone...roasted chicken, selection of veggies, bread, biscuits and quinoa; and then ended with the baguette/dark chocolate app. from this site.  Big hit with the family...I made a Shirataki noodle and veggie saute with Tempeh...I know, it doesn't initially sound great; but the flavors were amazing!

I am working to loosing more weight...I have lost 150 so far.  My goal, staying in a size 10; I was a woman's size 32, and I am now a size 14.  I does feel great to be able to walk into stores and buy clothes; and not have to special order them from online.

Hi Folks, here is a requested recipe for Hudson's Cheese Soup 4 T. butter, 1 T. finely diced yellow onion, 1/2 c. very finely diced celery, 1/2 c. very finely dicked carrot, 1/2 c all purpose flour, 1 T corn starch 1/8 t. paprika, 1/8 t. baking soda, 3 c whole milk, 3 c. chicken broth, 2 lbs. aged sharp cheddar cheese, shredded, 2 drops of Angostura aromatic Bitters, salt and pepper to taste and fresh minced parsley for garnish. Melt the butter in a large soucepan; add onion, celery and carrot. Cook gently stirring often (about 10 minutes)until vegetables soften. In a small dish, mix flour, corn starch, paprika and baking soda together. Add to vegetables and cook stirring constantly for 1 minute. Slowly add milk and broth and whisk til smooth. Heat to a simmer; cover and cook gently stirring often (about ten minutes)til carrots are tender. Remove from heat; add cheese SLOWLY and stir til smooth. Add bitters, salt and pepper to taste and stir till incorporated. Serve hot with a sprinkle of parsley I have seen another recipe that called for 1 1/2 cups of onions, 1 cup each of celery and carrots. Also they added the bitters to each bowl.

ps to Hudson's Cheese Soup recipe You may use a cusinart or a liquid blender to make a smoother consistency once the veggies have been added to the liquid.

Congratulations Now buy some bright colors throw those Grey's and blacks. Think sunshine when you shop. It sounds easy but that little devil still sits on my shoulder I let my GD pick some of my colors.

If I have to cook...it's with a slow cooker...so far, (knocking on wood) it hasn't failed me yet! I am now working to get healthy...I have lost 150 pounds so far...and this is encouraging me to cook, and cook healthy. I try to cook healthy...so to keep loosing weight. I found this recipe for a "healthy" eggplant parmesan...it took me all day to prepare...and was so not worth the time and effort...and it tasted worse than dirt. There are just some things that should not be changed.
