Roasted Garlic Cauliflower

I made this exactly as described, except didn't bother with the whole bag-mixing step, just mixed everything right in the baking pan. I also didn't bother broiling at the end, just cooked it a little longer (maybe 40 minutes total). The cauliflower was perfectly browned without being burnt. And, I used sea salt and dried parsley flakes instead of fresh parsley. Will definitely be making this again, although I may try to cut down to 2 tbs oil to cut out some calories. This was hands-down the best cauliflower I've ever had, although it does make it a little less healthy than my normal plain, steamed cauliflower.

Easy, No-Bake Nutella® Pie

I made this in a 9x13 baking pan, and made my own Oreo crust for it. I also didn't spread the layer of Nutella on the bottom, just mixed all the nutella, cool whip and cream cheese up together, spread it in the pan, and froze it overnight. Cut it up into bite-size pieces when it was ready to serve, and transferred it to a serving dish. The second time I made it, I added some chocolate chips I had to get rid of- good addition, but didn't make it leaps and bounds better or anything. Both times it was gobbled up and people I didn't even know where seeking me out to tell me how good it was. Very rich, so I think it worked better in bite-size bars than as big pie slices. But for how easy it is to make and how delicious it is, definitely a 5-star recipe.

Mini Cheesecake Bites

I made these exactly as written except used mini phyllo cups. I did have to double the recipe to fill about 25 cups. Drizzled them in melted chocolate. They were a little bland. If I ever make them again, I'll use plain sugar instead of confectioners sugar, to give it that more crystalized, sugary texture. And maybe a topping other than chocolate would give it more flavor, or adding something to the mix. For Christmas I can see these being great with some peppermint extract and crushed peppermints on top, for example. Another reviewer suggested Amaretto and a bit more Cool Whip, that sounds amazing! I think for how easy they are and how nice they look, they're great for an impressive and quick dessert. Flavor-wise, though, it's just a very basic, bland cheesecake. Use this as a base recipe to create something fantastic.

Grilled Lamb with Brown Sugar Glaze

I followed the recipe exactly and this tasted like I was doing the cinnamon challenge. The friend I had taste-test it with me said cinnamon is one of his favorite things in the world, and this was the first time he thought something had too much cinnamon. I gave it a shot anyway based on all the good reviews, and regretted it. I used this recipe as a base, however, and discovered that if you leave out the tarragon, ginger, and cinnamon, and add some rosemary and oregano instead, it's absolutely delicious. I wish I could make it every night. As written, though, it was completely inedible.

Broccoli and Onion Casserole

I followed this exactly except used a broccoli/cauliflower mix, and used chive & onion cream cheese per earlier reviews saying it was too bland. I also didn't steam the veggies at all, the cooking time is more than enough and I know they would've been mushy if I'd steamed them first. I thought there wasn't enough sauce- maybe next time I'll use less veggies? It came out tasting very similar to plain steamed broccoli. Its not necessarily bad, but definitely needs to be spiced up a little. I'll probably try a different recipe before trying to fix this one.

Pasta Salad II

This is a totally average pasta salad. Its good, yes. Most people will eat it and enjoy it. But you won't get any raves about how amazing it was, and requests for the receipe. So, its a good, simple, make-ahead dish that everyone will appreciate, but nothing special that will wow anyone.

Pepperoni Caesar Pasta Salad

I absolutely love this recipe, and its so easy. Get lots of compliments on it. Suggestions: Definitely blanch the broccoli for a few minutes, as another reviewers suggested. Not too long, but soften it up a tad. Also good with cubed pepperoni instead of the thin slices. And make it the night before to let the dressing soak in. Next time I'm going to try it with a mixture of parmesan and mozzarella cheese, as that sounds delicious, but its really great as is. Perfect make-ahead dish.

Chicken-Parmesan Bundles

As-is, this is a 3-star recipe. To give it more flavor, I used Italian Herb flavored cream cheese (the new Philly Cooking Cream), and seasoned bread crumbs instead of crackers. That made it a 4-star recipe. My boyfriend loved it, although I think I need to play around with it a little more to perfect the flavor. Its a great base, and I'm sure I'll use this with different flavors of cheese and different veggies- maybe chopped artichoke hearts next time. Definitely potential for a 5-star recipe if you suit it to your tastes!

My Mom's Parmesan Chicken

The seasoning on this chicken parm was amazing. I threw in a few extra seasonings, just an extra shake here and there, but it was fantastic. I used thin sliced chicken breast and dipped them in egg before coating. Cooked for about 10 minutes, then flipped over. Cooked for another 5 minutes, then covered each breast in marinara sauce and shredded mozzarella cheese, and cooked another 5 minutes or so. Obviously changed the recipe a little, but it was a great base and the chicken turned out perfectly seasoned and juicy. Served with spaghetti and garlic bread. Definitely making this one again!

Pizza Pinwheels

These were good, but should DEFINITELY be made exactly according to the recipe! Based on some reviews, I tried putting sauce inside the rolls, and it was a mess. Not only did it become extremely hard to roll them, but all the cheese and meat slipped out during baking or eating, and they didn't freeze well with the sauce inside. I made the second batch according to the recipe and they were much easier to make, freeze, and eat... plus they were tastier! Not a 5 star app but a decent easy-to-make finger food. Very versatile too- I made some with ham and cheddar that were honestly better than the pizza ones, and I'm sure I'll use this recipe for more flavor combos in the future. Tips: Marinara or ranch are great dipping sauces. One 24oz package of pepperoni allowed me to make 4 cans of crescents. The thicker they are cut after you roll them, the better they are. If you cut them too thin, all of the filling will ooze out when you bake them and you'll be left with nothing but a mess. And using the seamless pillsbury recipe creations sheets (cut into 4 rectangles) worked really well.

Spicy Rye Rounds

Known to the Irish as "sh*t on a shingle"... been in the family for years. This recipe is so simple and delicious- use Velveeta! And I prefer mild Italian sausage... it appeals to more people. I've never met anyone who didn't love this recipe.

Easy Pilaf

I followed it exactly and didn't get much flavor. I mean it was good, but just tasted like rice with a few onions in it. I was hoping for a more chicken-y, cream-y, pilaf-y dish. I'd make it again because it was better than just plain white rice boiled in water, but wouldn't use this for a "pilaf" recipe.

Avocado Mango Salsa

I left out the pepper, everything else according to recipe. Served it as an appetizer at a dinner party and everyone liked it and complimented me on it. I'd make it again as an app, but it wasn't extremely special in my opinion. I'll probably keep looking for a salsa recipe, but this was a great recipe to serve with fish tacos.

Spanish Rice II

Made exactly according to recipe. It was fine, nothing wrong with it and the whole bowl was finished at the dinner party I was hosting. But there was nothing special about it either, no one raved about how good it was. Honestly think it would've been tastier to buy some pre-made Spanish rice.

Sopapilla Cheesecake Pie

Made this for a dinner party, served cold. Found it just OK. I would give it 3 stars, but everyone else raved and had 3 or 4 servings. I'm not a huge fan of sweets, and this is pure sugar, but those with sweet tooths loved it. I did put almonds on top after it had been in the oven for about 10 minutes, and to me the bites with almond were fantastic- I think the nuttiness really evened out the sweet. In the future I'm covering the top with almonds. Otherwise followed the recipe exactly, except used regular vanilla since I didn't have Mexican vanilla.

Tuna Noodle Casserole

Really didn't think I'd like this much because I'm not a fan of peppers or onions, but trying to get my boyfriend to eat more fish. Surprisingly, I really liked it, even had seconds! Followed the recipe exactly except no pimentos. Oh- and my boyfriend finished the entire rest of the casserole himself in one sitting and still wanted more! Definitely will made this again.

BBQ Chicken Crescents

I didn't measure anything according to the recipe when I made this- just baked 3 chicken breasts, used a bag of shredded cheese, a bottle of BBQ sauce, and put about two spoons of cream cheese in. I also wrapped them hot-pocket style in the crescent roll, instead of rolling them, to make it neater. My boyfriend said its the best thing I've ever made. They were pretty delicious, and the simplicity made this something I'll definitely try again!

Smothered Chicken Breasts

First of all, I'm not a fan of onions. I made this recipe bc my boyfriend LOVES sauteed onions, and I wanted to make a special dinner for him. He did love it- scooped up every last bit of onion and sauce on the plate. And even I, someone who hates onions, wanted seconds, bc they were soooo good prepared this way! Didn't do much differently. I baked the chicken in the oven. Didn't measure out two tablespoons of bacon grease, just left it all in the pan. When the chicken had a few minutes left I scooped the onions and crumbled bacon on top of the breasts and added the cheese, and let it all melt together, as other reviewers suggested. Since I had extra bacon grease I spooned a little of that onto the chicken as well, to add some flavor. Also, my bf doesn't like seasoning on his chicken, so I skipped the lemon/salt step. Other than those tiny changes I followed the recipe to a T and it was delicious, can't wait to make it again and maybe add some peppers!
