Special Buttercream Frosting

I made this frosting for a carrot cake and made the mistake of substituting 4 cups of splenda for 4 cups of confectioners' sugar to try to cut back on the sugar. Don't ever do that people. The icing still managed to be fantastic, but not as smooth. I made it again to the letter and it was marvelous; smooth, sweet and easy to work with.

Sour Cream Chicken Enchiladas

I love this recipe. I made my own salsas and believe me the fresher the better and they are so easy to make if you have a blender. One consideration though...be careful of the type of cheddar you use. Extra sharp cheddar is not a good cheddar to use. Other than that this recipe is simple and tasty.

Ham and Cheese Breakfast Quiche

Loved it! This really isn't a quiche in the since that it doesn't have a crust, but the casserole that this recipe creates is great to make with holiday leftovers; those potatoes you didn't use, and the leftover ham are easy to throw together for an after holiday breakfast. I shredded a potato and it worked just as good as packaged potatoes. Also I didn't have heavy whipping cream. I substituted with half-n-half and butter.

Lemon Icebox Pie III

A fantastically easy pie to make. I added an egg yolk to firm it up as I'd put too much lemon juice. It worked out well.

Rich and Creamy Tomato Basil Soup

I love the simplicity of this recipe. I've tried others that had a ton of ingredients, but this recipe offers a simple soup. If you don't have whipping cream you can substitute with half-n-half and butter. I also used olive oil instead of butter. It really made the basil outstanding.

Rum Raisin Bread Pudding with Warm Vanilla Sauce

Great! I used French bread instead of raisin bread and it a thinly sliced pear instead of an apple. It turned out fantastic.
