About this Cook
I like classic recipes that are easy so I can remember them all.
My favorite family cooking traditions
My mother is Chilean so even when we ate sloppy joes they were different. I cook the old school way sometimes, but more often cook for the American in me.
My cooking triumphs
Restaurant-worthy enchiladas and Spanish rice; tender Hungarian chicken paprikash; and, coconut cookies that were incredibly moist because I forgot to add two ingredients!
My cooking tragedies
The ones that I repeat! Adding too much wine instead of water or broth; not adding enough cheese; too much or too little salt; and, under-cooking the meat!

Roasted Garlic Lemon Broccoli
This recipe sounded delicious, but I was worried after I read negative reviews that my penchant for steamed broccoli would be unsatisfied if I baked it. So as I steamed the broccoli in my food steamer, and as I set out all the remaining ingredients, I also decided to brown the garlic in the olive oil. While the broccoli was steaming, I browned the garlic in a pan on the stove, and then stirred in the browned garlic and olive oil, seasoned it with salt and pepper, then added the final flavor of fresh lemon juice. I LOVED IT! It is such a great variation on my old steady: plain steamed broccoli! Thanks for the recipe + inspiration!

Crispy Fried Chicken
I didn't follow the recipe except to leave the chicken cooking in the hot oil after the meat is done, for an extra 10 minutes or so. IT WAS SO CRISPY! I dredge it in seasoned flour TWICE, with a savory egg wash. I am so happy I finally made extra crispy fried chicken! THANK YOU!
