Sturdy Whipped Cream Frosting

Excellent recipe. Not too sweet but easy toe spread. I used it on a coconut cake and it was just the right texture. I started with room theme low fat cream cheese and used a prechilled bowl. Lovely.

Lentil Stew

This is amazing. I was looking forward to the even better taste of day 2, but there may not be leftovers. I tooknad ice of other reviewers and starts by simmering the lentils while cutting up the vegetables. But then had to run errands, so finished in the slow cooker for two hours on high. My variations: used turkey kielbasa, fresh cut tomatoes and added fresh parsley and cilantro since I had them on hand. Also added carrots. A nice taste from the get go.

The Best Rolled Sugar Cookies

I have to add my endorsement to the thousands of great reviews on these cookies. We made our Thanksgiving turkey cookies and they were just what I was looking for. Just a note: I read many reviews and took the recommendation of increasing the sugar by 50%. This must be a personal preference as we found them to be a bit too sweet. Next time I will go back to the original amount. I did double the vanilla (we love vanilla), and that was just right. The dough was not sticky once it sat in the refrigerator for a couple of hours. Will use again.

All-Day Apple Butter

Great recipe!!! I love apple butter and slow cooking. So this is a great combination. I took the suggestion of other reviewers and reduced the sugar to 1/2 cup brown sugar and 1/2 agave (had it on hand). I used a mix of sweet (Gala, Johnagold) and tart (Harralson) apples, added allspice, nutmeg and vanilla in a 6 quart cooker. 15 apples were reduced to 1 1/2 pints. Next time I might add apples as they cook down. After cooking I used an immersion blender to smooth it out. It came out very buttery with just the right mix of spices, sweet and tartness. It did not last a week. Will definitely do it again.
