White Chocolate Raspberry Cheesecake

It's still in the oven! It won't set up! I am going to try leaving in in oven with heat turned off for another hour. it will surely be pudding if I take it out now and it's been baking almost two hours. Looks pretty but i will use my favorite plain cheesecake recipe next time that I know works and add the raspberry sauce to it. Maybe a chocolate crust too. This was to be our only dessert for Easter Dinner tomorrow! Now what can I do? I'm too tired to make another and that would involve another trip to the store!! I hate trying recipes that don't work! I thought this would be wonderful because it had five stars! NOT!

Garlic Shrimp Linguine

This was very good, and easy. I made the sauce ahead of time and once my guests arrived i reheated the sauce and cooked shrimp and pasta... quick and delicious. I added fresh spinach to the cooked pasta to make it more nutricious and delicious! We all love spinach!

Cheeseburger Meatloaf

the cheese did come out and my DH said he liked my usual meatloaf better. I make it similar to this but add catsup to the mix and no cheese... took half of this to a friend too so i will see what she says!

Pesto Cheesy Chicken Rolls

This sounded like it would be dry so i spritzed on olive oil over the top of chicken pieces... DH had a conference call so it stayed in oven longer... too long probably! We used some of the drippings to put over the top and that helped, but i think maybe doing half of the cooking covered in aluminum foil would help, then uncovering with a spritz of olive oil and paprika to help it look browned... Took some to a friend and she said it was wonderful cooked covered half the time... I had trouble getting the edges secured and the cheese came out... I must not be doing it right! Mine sure didn't look like the picture.

Pasta Fagioli

Thought this was great and neighbors did too.. they asked for recipe. I couldn't find spinach pasta so used the tri-flavor pasta. My husband wasn't thrilled with the texture of canned beans. I usually cook beans (dried) until they are soft so I might add the beans earlier next time to let them cook a bit more.
