Sour Cream Blueberry Coffee Cake

This was amazing! I use blueberries I had just picked. Unfortunately, I didn't have all the ingredients, so I had to substitute. I used greek yogurt instead of sour cream. I only had one sick of butter, so I added some shortening and applesauce. I also used half whole wheat flour and reduced the sugar. I couldn't really spread the batter over the top, but it didn't matter. It baked up beautifully, but did take almost an hour.

Chicken and Broccoli Braid

This was good. I made a few changes, following some of the reviews. I'm sensitive to raw onion, so I sauteed it in a bit of olive oil along with the garlic. I used a small amount of chopped roasted red pepper. I used less than a tsp of dill. I used low-fat mayo and grilled chicken. I also used a colby jack mix of cheese. It was yummy! I think I had more broccoli than it called for, but I liked it that way. I slightly steamed the broccoli and let it cool first before putting it in the mix .

Ninety Minute Cinnamon Rolls

I'm currently making these rolls for the second time. They are great. I made them in a 9x13 pan this time. Last time I used an 11" pan, which was not big enough. I think you could roll the dough out a bit larger than 9 x 12. Also, I used butter, not margarine. I did NOT use a full 1/2 cup of butter for the filling. I had to use extra flour since it was quite humid here. I used the cream cheese frosting suggested by another reviewer. Perfect. They are delicious!

Crustless Cranberry Pie

This was delicious! I followed the recipe exactly, except for adding 1/2 tsp vanilla and only 1/4 tsp almond extract. Next time I'll try it as written. I also reserved a handful of cranberries to press into the top of the batter as suggested by another reviewer. It was beautiful. I'll be making this for Christmas dessert. Thank you!

Pesto Cream Sauce

This was delicious, though I had to make some changes because of what I had on hand. I completely omitted the butter and instead stirred the flour (I used 3 tablespoons) into the oil after sauteing the garlic and onion in it. I used nonfat milk, prepared pesto, and shredded Italian cheese blend. I served this on whole wheat noodles. Next time I will add shrimp or chicken, but it was great with tomatoes and kalamata olives.
