Sam's Famous Carrot Cake

Made this for a co-worker's birthday because carrot cake is one of her favorites. It was a hit! Ran out of vegetable oil, added some olive oil to make up the difference. Also, baked it in a 9x13 pan for 45 minutes. Other than that, stuck to the recipe as written. It's a keeper! Frosted with cream cheese frosting (8 oz. cream cheese, 1/4 cup butter, 1 tsp. vanilla, and 2 1/2 cups powdered sugar -- recipe from Alton Brown).

S'more Brownies

Made a double batch for a co-worker's birthday and received compliments all day. I baked two pans of brownies (Duncan Hines Fudge - fudgy version, of course) for 25 minutes each. I split a third of a box of Honey Maid graham crackers, a bag of mini marshmallows and a bag of Hershey's semi-sweet morsels between the two pans. Added the toppings then baked an additional five minutes. I would definitely make these again.

Momma's Wine Cake

My friend gave me a recipe that's very similar to this one. Used yellow cake mix, 2/3 cup of wine and oil. Had red wine and it worked just fine. Fresh ground nutmeg is better, I use a whole nutmeg but less can work too. The cinnamon sugar dusting on the pan makes for a nice light crust, and I think it helps keep the cake from sticking in the pan. Everyone I know who has tried this cake loves it.

Cream Cheese Frosting II

I halved the amounts, and it was perfect for 24 cupcakes. I've also used this on banana cake (9x13). I think it's the perfect balance of sweet and tangy.

Wonderful Banana Cake

Made this recipe using three bananas instead of two. Spread some cream cheese frosting and tossed some mini chocolate chips for decoration. My mom brought the cake to a party and it was a hit.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Made these for a co-worker's birthday, and they disappeared fast! Received a lot of compliments. I followed steps 2-4 exactly and used the premade Toll House cookie dough which was already frozen. Topped with Duncan Hines chocolate frosting. They were a hit! I'd make these again; it was so easy.
