Sam's Famous Carrot Cake
Made this for a co-worker's birthday because carrot cake is one of her favorites. It was a hit! Ran out of vegetable oil, added some olive oil to make up the difference. Also, baked it in a 9x13 pan for 45 minutes. Other than that, stuck to the recipe as written. It's a keeper! Frosted with cream cheese frosting (8 oz. cream cheese, 1/4 cup butter, 1 tsp. vanilla, and 2 1/2 cups powdered sugar -- recipe from Alton Brown).

S'more Brownies
Made a double batch for a co-worker's birthday and received compliments all day. I baked two pans of brownies (Duncan Hines Fudge - fudgy version, of course) for 25 minutes each. I split a third of a box of Honey Maid graham crackers, a bag of mini marshmallows and a bag of Hershey's semi-sweet morsels between the two pans. Added the toppings then baked an additional five minutes. I would definitely make these again.

Momma's Wine Cake
My friend gave me a recipe that's very similar to this one. Used yellow cake mix, 2/3 cup of wine and oil. Had red wine and it worked just fine. Fresh ground nutmeg is better, I use a whole nutmeg but less can work too. The cinnamon sugar dusting on the pan makes for a nice light crust, and I think it helps keep the cake from sticking in the pan. Everyone I know who has tried this cake loves it.
