Grandma's Best Ever Sour Cream Lasagna

this was great! i did change it up some, i left out the olives and i used half sour cream half riccotta, and i also used a bigger can of tomato sauce and increased the amount of spices in the sauce. i put a lot more mozzerella in it when i made it for my brother, but i like the amount in the original recipe. i'll be keeping this one!

Ukrainian Olha's Varenyky (Perogies)

My roommate my first year in college was from a polish family, and her mom made me the first perogies id ever had. This recipe is very good, though it takes a bit of finesse and practice to put the filing in the dumplings the way her mom told me it was supposed to be done. i used mashed potatoes, and i put half bacon fat half butter in the skillet when i sauted them for a bit of extra flavor.

Caribbean Rum Punch

My mom and i went on a cruise several years ago, and after an insane jeep trip over a mountian in St. Lucia, we were given cups of this drink from our tour guide. It's not nearly as strong as the 'rocket fuel' we had there, but the flavor made me feel like we were back on that mountain looking out at the banana plantations and the beach. i used half orange, half pineapple juice, just for our preferences.

Merwin's Shrimp Gumbo

Ive noticed many reviews that say this takes too much time, and it should be noted that gumbo should NEVER be rushed. this is not a quick throw together dish. I like to make up a bunch of roux and freeze it, and that does cut back a bit of time, but you should still be careful not to rush this, and let it stew a good amount of time. I like to use several large bone-in skin on chicken breasts, which i take off the bone and put back in the gumbo later. I also like putting some crabmeat in, and i cant find file anywhere around here, so i just thicken it with a bit of cornstarch. serve with a big scoop of white rice and some hot sauce at the table, and this is a winner.

Slow Cooker Barbecue Goose Sandwich

Slow Cooker Carnitas

this is the closest ive ever come to authentic carnitas. i did double the spices, but i spilt it in half, and coated the chunks of pork in half the spices and seared them till they had some color, then once i got them in the crockpot i put the rest of the spices in, and i only used one bay leaf. was great on flour tortillas with mexican rice.

Spaetzle and Chicken Soup

nice and warming, i used the drop in method for the spaetzle like some of the other reviewers and it turned out nice. tho, im not sure if its my taste or if it was the carrots i used, but they got a bit overpowering. I'll try it with fresher carrots next time.

This reminded me of something my mom used to make when I was in high school, and thats the only reason it got four stars. tastes pretty generic, but it's a nice recipe to cut in half and throw together if you need a quick dinner.

Layered Chicken and Black Bean Enchilada Casserole

This was a crowd pleaser.I didnt put the sour cream on during the last part of baking tho, i prefer to let them add it as they like, and i toasted the tortillas in a skillet a little first, gave it a nice little smoky kick. But I dont recomend using whole wheat tortillas, my grandma asked me to try them with this once for her, and it did NOT taste right.

Zesty Slow Cooker Chicken Barbecue

tasty, but i dont like my bbq to be nearly as sweet as this turned out, so i used half the sugar the second time. Turned out nice with Famous Dave's bbq sauce and with Jack Daniel's sauce, though it was more moist with Jack Daniel's. I put this on toasted keiser rolls from the grocery store bakery, and it when well with a vinegary slaw on the side.

Black Magic Cake

If you're a chocolate lover, this cake is like heaven on a plate. I took it one step further and turned it into a rumcake by making it in a bundt pan and pouring a 1/4 cup of rum on it after poking the top with a fork, then turned it out and frosted with a thick ganache frosting. You will not believe how good this is! It's been known to make people go weak at the knees at my house ;)

Italian Rice Balls

These were definately a little bland the first time around, so the second time I cooked the rice in chicken stock with some garlic, and used seasoned crumbs with a few spices added in. And since i cringe at the thought of trying to deepfry ANYTHING in olive oil, I went with vegetable oil. also stuffed a chunk of mozzerela in the middle, and i might try putting some ground beef or italian sausage in it next time. these turn out pretty nice, you just need to tweak it to your own tastes.

Kalua Pig in a Slow Cooker

Best. Pork. EVER! I got a roast that had a pretty thick fat layer, but i always listen to what my grandma taught me, "fat is flavor", so i cut half of it off and put it on the bottom side that had no fat on it. skimmed off most of the fat that had cooked out before dumping in some chopped cabbage. The Hawiian salt is a pain to find and its kinda pricey over here, but its worth the money. By the time it was ready the bone pulled out completely clean, didnt even have to work at it to shred it since it fell apart the second i tried to pull it out of the cooker. ate with sticky rice that night, and the next day stuffed it into some pitas with a bit of chinese-style bbq sauce and some vinegar based slaw for my lunch. One of my coworkers took half of one and now theyre begging me to bring some in to work. Gonna be making this one a lot ;).

Slow Cooker Beef Stroganoff I

i made the original recipe and wasnt crazy over it, thought it was bland, so i tweaked iti used two cans of condensed onion soup since i dont like mushrooms in the first place, but i still added the chopped onion since i thought it added a bit of freshness to it. Also used half sour cream half cream cheese, to get it out of my fridge, and added some garlic, black pepper and just a few drops of hot sauce, and put it over some white rice. not a traditional stroganoff, but it tasted nice, and since im never home its nice to have something you can dump in and leave for a few hours.

Chip Chicken Lollipops

I gave this recipe to my brother, who is nearly useless in the kitchen, for my niece's birthday party. If he can make this, anybody can, tho i did go over to supervise ;). they turned out nice and crunchy and juicy, and they were nice since the kids were so hyper we could just stick one in their hands and not worry about a mess. the favorite flavor at the party was bbq chips with ranch sauce, tho the parents seemed to like the plain chips better. we tried cheddar and sour cream chips too, but those turned out a little funky and tasted like burnt cheese. and be careful the type of chips you buy, kettle-cooked chips didnt work as well for us, they were a little too hard.

Simple Malaysian Fried Chicken

this is a really nice dish if you're looking for something new to do with chicken. i used breast filets cut into strips, thats just what i had in my freezer, and fried it in a big cast iron skillet since i dont have a wok, and it turned out well, but i think itd be more moist with bone-in chicken. I also didnt add as much curry powder, but only because i had my youngest nephew and he wouldnt have eaten it. Turned out to be a hit sevred with some fried rice and a fresh salad, and his mom is asking me for the recipe now ;). But when i fix it for myself I'll add all the curry, as well as some hot sauce.
