Apple Pie by Grandma Ople

This came out great! I didn't have to worry about apples browning because of the syrup. I added some cinnamon, but otherwise follwed the recipe. It was gone in 24 hours! Everyone loved it.

Oven Fried Chicken II

MAde this Saturday for the kids and grand kids. OF COURSE!! No ritz crackers, no bread crumbs. I substituted a combination of Sunshine Wheat saltine crackers, cheddar/ pretzel crackers and plain panko. I had to double the dry ingredients and stretch the eggs with milk for 12 large chicken legs. I patted the legs dry. I used gallon zip bags for the dry ingredients. I added Old BAy seasoning with salt & pepper in the flour and Everglades to the last toss. I followed the baking directions & everyone came out brown and delicious. Everyone was happy with the oven fried legs. This is a keeper.

Zucchini Herb Casserole

I was pleasantly surprised. Of course I read the reviews, added dill weed, less oil, yellow onion instead of green, and much less cheddar on top. I wanted something light to go with a steak for two & there was a zucchini I wanted to incorporate into a meal. I liked it! Husband came back for seconds- always a good indicator.

Slow Cooker Stuffing

My oven died on Tuesday before Thanksgiving! What a mess... BUT, I found the crock pot dressing recipie and read the comments about adding liquid carefully. I started with about 1.75 cups of broth & may have added about another 4 ounces by the time dinner was served. On high for 45 mins. then on low for 3 hours. It really was better than I expected! Family was happy with it too! Thanksgiving was saved. I may have discovered a new tradition: Stuffing in the crockpot & the turkey on the gas grill.

BBQ Chicken Pizza

We loved it, but I had to change several ingredients because of our tastes & what was in the pantry: No Cilantro- we don't like that stuff. I used VIdalia onions, plain ordinary barbecue sauce and no peppers, and I guess my eyeglasses were dirty so I saw pepperoni & I substituted diced sausage for that- The cheese was a combination of mozzarella, cheddar, and monterey jack with jalepenos. I sprinkled the chicken breasts with "Everglades" and something called "Mojave Fajita seasoning Red" before sauteeing in a non-stick pan covered with cook spray & a splash of Chicken broth. I had a Pillsbury crust in the fridge so I pre-cooked that according to directions and after browning the chicken I cooled it and diced to bite size. It was set aside and the sliced onions were sauteed in the same pan with a lil cook spray & chicken broth.Last I added the diced sausage. Finally, I piled the chopped chicken, onions, diced sausage, 3/4 cup o BBQ sauce & another splash of chicken broth back into the pan & stirred until the consistency of the whole thing looked "right". I spooned that combo onto the pre baked "crust" and piled on all that delicious shredded cheese blend. It ROCKED. It really hit the spot.The Fajita seasoning made up for the difference between spicy & "plain" BBQ sauce. I'm going to make it again -closer to the recipe (Still no Cilantro) .IT's a great addition to my recipe library! Thanks :-)

Easy Apple Cinnamon Muffins

Wow, I wanted 18 muffins for a large family crowd, so I tripled the recipe. OOPS! Big Mistake...I must never forget to read the comments again. Muffins #19 through 36 PLUS a large loaf are in the oven now. IDK- 3 hours later... However, they are beautiful and delicious! Just follow the comments. Fill each cup halfway. The recipe makes twice as much as it says. Add oats too!

Grandma's Sloppy Joes

I made this. Don't be afraid of the cloves; just sprinkle a dash over the skillet. I used half the brown sugar; a small tin of paste instead of sauce, because that's what I have.No peppers either. Still good.

Baked Buffalo Wings

I am making this recipe for the second time. Truly, the trick is to dry your wings and let them 'set'. :-) I don't use the red hot sauce because i need something milder and my significant other drenches everything with TABASCO sauce anyway. I will melt the butter and combine with a mixture of italian dressing & bbq sauce instead. Last time I made Jack DAniels sauce and poured that over the wings. These are delicious and I think whatever sauce you prefer will only enhance them.

Corn Salad with Creamy Italian Dressing

I had 4 ears of corn to use up and stumbled on to this recipe last month. I used bottled roasted red peppers & since I only found the recipes 4 or 5 hours before supper, the dressing did not marinate as long as Chef John recommends. Dried basil, no fresh herbs hereabouts. But it was still very yummy. It will go into my hot as heck summer sides rotation. Thanks again to Chef John.

Easy Toffee Bars

These taste so good! But what a mess I have now. I followed the advice I read in the comments from naples 34102 and ROBBINS47:Foil lined pan, cook spray,etc.I couldn't possibly use them as gifts because they don't look very nice.I doubt I will try this again...but they are delicious.
