Zucchini Herb Casserole
I was pleasantly surprised. Of course I read the reviews, added dill weed, less oil, yellow onion instead of green, and much less cheddar on top. I wanted something light to go with a steak for two & there was a zucchini I wanted to incorporate into a meal. I liked it! Husband came back for seconds- always a good indicator.

Corn Salad with Creamy Italian Dressing
I had 4 ears of corn to use up and stumbled on to this recipe last month. I used bottled roasted red peppers & since I only found the recipes 4 or 5 hours before supper, the dressing did not marinate as long as Chef John recommends. Dried basil, no fresh herbs hereabouts. But it was still very yummy. It will go into my hot as heck summer sides rotation. Thanks again to Chef John.

Oven Fried Chicken II
MAde this Saturday for the kids and grand kids. OF COURSE!! No ritz crackers, no bread crumbs. I substituted a combination of Sunshine Wheat saltine crackers, cheddar/ pretzel crackers and plain panko. I had to double the dry ingredients and stretch the eggs with milk for 12 large chicken legs. I patted the legs dry. I used gallon zip bags for the dry ingredients. I added Old BAy seasoning with salt & pepper in the flour and Everglades to the last toss. I followed the baking directions & everyone came out brown and delicious. Everyone was happy with the oven fried legs. This is a keeper.
