My favorite things to cook
Cajun blackened catfish or chicken. TexMex enchiladas. Southern Style. Off the bone Baby Back Ribs. Love to BBQ.
My favorite family cooking traditions
Biscuits with larapin gravy (means good enough to lick the plate). Boiled peanuts, fried okra, just about anything southern, Italian, Cajun, or Mexican. I also do a lot of my own asian dishes.

My cooking tragedies
Scallops. I guess if you can't stand the taste it is hard for me to make them come out right. I don't eat creepy crawly things. I have tried lobster, too tough, shrimp I love as long as it has been peeled and deveined, I caught crawfish out of the ditches in Texas and my mama cormealed and fried the tails and they were great! But nowadays they throw the poor things alive in boiling water like they do the lobsters and crabs and I cannot make myself eat them! I am an animal activist, not a vegetarian, I just dont believe in cruelty or sport killing.

Grandma's Hash Browns
My grandma cooked them like his also, but like another gal used bacon grease. And she diced up a big ol sweet onion in the skillet w/ the bacon grease and bacon leavin' sauteed till onion was transparent. Then shredded the potatoes into the (iron) skillet with salt and lots of black pepper, flipping the taters till crispy brown all over. Nowadays I micro-bake my taters. and wow i love the taste that way! and you can do it all in one morning!
