Ham Salad II

I am not a huge ham fan and found this recipe ideal for after-the-Holidays leftover ham. I added some spicy mustard for a bit of added flavor. I also chopped the ham and veggies in the food processor for a nice small consistency.

Kung Pao Shrimp

Easy Lemon Cookies

I agree with the rest. This is a great tasting and easy to make recipe. The lemon is a nice contrast to the usual sweet chocolatey cookies and would be a nice choice for an assorted cookie tray. The lemon is very refeshing and light. I will definitely make these again.

Whole Wheat Beer Bread

This was very good and very easy. Adding chopped sun dried tomatoes and greek olives would be a nice addition to this recipe.

Oatmeal-Currant Scones

I made these around the Holiday's and they were a big hit. My Husband ate them up before I could get my hands on a second one. I substituted the OJ for orange liquer since I had it on hand and next time I will use more and reduce the water. The mixture came together rather easily and I felt a bit less guilt knowing I used milk rather than cream as in most scone recipes. A definite keeper!

Savory Crab Stuffed Mushrooms

These were fantastic! Truly the best stuffed mushroom recipe I've come across yet. (I've made several over the years)They make a nice presentation and for those who claim not to like seafood, they might not realize they are even eating crabmeat. A real keeper!

Italian Anisette Cookies

These were delicious and authentic Italian cookies with a nice strong anisette flavor. I presume the recipe had a typo regarding the 6 Tbs. of baking powder and I reduced it to 1 heaping Tbs. They were the exact consistency they should be and I cannot imagine what an additional 5 Tbs would have created!
