Baked Apricot Chicken

Reviewed: Jan. 3, 2002
I have made this recipe for years, only I have always used Italian dressing in place of French dressing. I will have to try French dressing for a change. In recent years (now that we are more fat conscious)I always use the apricot jam, mixed with a package of dry Good Seasons Italian Dressing Mix and 1/4 vinegar (skip the oil). This is a recipe I fall back on all the time.

Aimee's Quick Chicken

Reviewed: Jan. 3, 2002
I liked the taste quite well, but it was a bit too salty. I used bacon bits and will try regular bacon next time to see if that makes a difference.

Best Hot Crab Dip

Reviewed: Jan. 2, 2002
This was a big hit at our New Year's Party. The dish was easy to fix and I did it the day before the party and just wrapped the loaf in aluminum foil and put it in the frige until the next day.

Creamy Dill Dip

Reviewed: Jan. 2, 2002
I thought this looked like an interesting recipe and tried it for a recent gathering. The guests loved it. Many asked for the recipe. I think it is better hot, rather than cold.

BLT Dip

Reviewed: Dec. 27, 2001
I tried this recently to take to a caroling party. I thought it was good, but nothing spectacular. However, everyone else at the party couldn't get enough of it (especially the men), so I am making it again for our New Year's Day Party. Very easy.

Italian Torte

Reviewed: Dec. 21, 2001
This is a fantastic recipe that I have used several times, all with great success. Everyone loves it and asks for the recipe. That is the only reason that I was not going to leave a review. I hate the thought that others will catch on, make and serve it and then it won't be quite as special when I make it.

O'Brian's Potato Casserole

Reviewed: Nov. 30, 2001
I have used this recipe for several years for a side dish at dinner or for brunch. One thing I do to make life easier is to put the sour cream, soup, cheese (cut in large chunks) and onions in the food processor and chop away. This saves the time that it would take to grate cheese and mince onions.

Hot Pepper Jelly

Reviewed: Nov. 23, 2001
I love the recipe. With the red peppers included, the jelly is a pretty color for the upcoming holdidays. The taste is perfect for me. It is hot, but not "killer hot." The one problem I had was that the jelly did not set up well and was runny. After a few days it is still not firm but it is more solid than it was. I actually don't mind the fact that it is not solid as I will be using it on cream cheese as an appetizer. I tried the recipe with dry pectin and liquid pectin and had the same results. The jelly may firm up as time goes on. However, I will use the recipe again, because the taste is perfect.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 23, 2001
This dressing was very good. I was a bit nervous, thinking it might be too seasoned for my groups, but everyone loved it. I quadrupled the recipe and had 13 at the dinner table. There was a small bit left over and that is now gone (the morning after Thanksgiving).
