Ed Zieba's Famous Family Pork Chops

I was surprised how good the chops were. Very good. Lots of flavor and very moist. I did this in my slow cooker. Four pork chops. 3 onions. Each chop generously salted with the seasoned salt. I added 5 small, waxy gold potatoes that were scrubbed but not peeled. I added more water. Maybe a cup to 1 1/2 cup of water. Only needed a couple of hours on high to cook and I didn't have to heat up the kitchen with my oven. No need to make the A/C work harder. :)

Fancy Potatoes

What's not to like in this recipe? Very yummy......... I made a variation tonight to make this a main dish. I cut the recipe in half and added three chopped green onions that I 'sauteed' with just about a 1/2 teaspoon of butter in the microwave. I chopped up 1/3 lb. of kielbasa and nuked that so I could drain the excess fat. Instead of mashing the potatoes I cubed them after boiling them. Cubing before boiling makes them absorb too much water. I've learned from the cooking shows to put the potatoes in the pan whole or cut in half, cover with water, and then put them on the heat. Bring to a boil and boil until done........ . . I threw it all together and baked for twenty minutes. Served this with green beans. Thanks for helping me make an easy, tasty dinner tonight.

Addictive Sweet Potato Burritos

Soy sauce and mustard in a burrito? Sweet potato? With all the rave reviews, I had to try these. I'm glad I did. Really good. I cut the recipe in half. I used one can of refried beans and only about 1/4 a cup of water and no cumin. After I baked them I served with salsa and sour cream. I thought they were great and husband said they were good but not great. I think I will try with a bit less sweet potato next time. I don't try to roll these burrito style. I just fold two sides of the tortilla over the filling and secure with a toothpick.

Chili Rellenos Casserole

WOW! I was surprised how much this casserole does taste like chili rellenos. My husband loves chili rellenos and he flipped over this casserole. So did I. Following others on some changes, I used an 8x8 dish, 3 eggs, the evap. milk and about 3 TBS of half and half (milk would do fine). I had some left over Rotel tomatoes so I sprinkled some of those in the middle of the layers. I used the amount of cheese called for in the recipe. For the final sauce I mixed 8 oz of tomato sauce with about 1/4 cup very HOT salsa, a dollop of the canned Rotel and 1/2 teaspoon sugar just to enhance the spicy flavors. I love this recipe and cannot wait to try it with fresh peppers. I used the whole fire-roasted, canned peppers. I think the canned diced peppers would not work well. There are so many ways to play with this recipe. Salsa verde, enchilada sauce, fresh peppers, various combos of cheese, etc. When I try a new dish that is said to be like another, as in this recipe, I don't tell whomever I am serving it to that it is like something else. I just called this a Mexican casserole. That way I don't set up an expectation of how it should taste so if it doesn't taste a lot like the original dish to someone it can be enjoyed for how it does taste. Without knowing the name of the dish, my husband commented on how much this tastes like chili rellenos. :)

Brown Sugar Cream Cheese Frosting

Best frosting for carrot cake by far. Very creamy and a great flavor. I make Sam's Famous Carrot Cake from this site which is fantastic cake with no frosting at all. This frosting on that cake is double superlicious. For my taste most cream cheese frosting recipes are too sweet and heavy. Happy to find a delicious frosting that doesn't overpower the cake. I doubled the recipe except I only used 1/2 teaspoon of almond extract. I prefer to leave out the vanilla extract and add a little more honey.

Avocado Green Goddess Dressing

Avocado-Shrimp Salad

The lime, salt, and onion give this salad so much flavor. I used some red onion. Cvelasquez23 suggested cucumbers and I liked that addition. I am going to do as a couple of others have done and add cilantro next time because I love it. But NO changes are needed for this delicious, EASY salad. My husband couldn't get enough of it.

Chicago-Style Pan Pizza

The tomato/onion/mushroom topping alone deserves 5 stars. With the fennel and other spices it's a perfect blend of flavors. I'm making myself hungry -- may have to go cut a bit of the leftovers right now. Made this last night. After adding all the ingredients to the mushroom and onion saute, I reduced all the liquid over medium heat while I cooked the crust for 10-15 minutes. I added some green pepper to use it up. I used two rolls of Pillsbury pizza dough in a 13x9 pan that was greased and floured. It was a little too much dough. But good. I need to cut the recipe down anyway so I may try one roll of pizza dough in a smaller pan. I plan to make the same amount of sauce and try freezing half.

Special Deviled Eggs

I was looking for an egg salad recipe for sandwiches and decided this looked delicious. I chopped the eggs and added all the ingredients except I only used a teaspoon of straight horseradish. Not horseradish sauce. I am sure I would like more horseradish, but wasn't sure if everyone would. Also used two tablespoons of chopped sweet pickle instead of three. I don't think that was a significant difference. This was so good! I put sliced, cooked bacon on the sandwich, added lettuce and, after one bite, I just swooned over my super lunch. Have also followed the recipe to make deviled eggs and this is a great recipe. My new favorite for stuffed eggs. I do add a little bit of horseradish at a time until it's just right. Different brands can be hotter than others. And I have lost my love of pickle relish, so I always chop sweet pickles as a substitute.

Red Pot Roast

Wonderful roast recipe. This is far better than the average pot roast. Off the charts good! The carrots and potatoes were also great and soaked up lots of flavor from the gravy. I made this in the slow cooker. Added the veggies the last two hours of cooking. I REDUCED the liquids and had far more liquid than I needed when the meat and veggies were done. I also had a little bit of hot Asian chili sauce that was also a sweet sauce so I used that up instead of the sugar and chili powder. Threw in a beef boullion cube, too. Very tender and delicious. I didn't add the flour to thicken the gravy. The leftover meat makes great sandwiches. The leftover carrots are delicious cold.

Spinach Lentil Soup

Good soup. The success of this recipe depends on the salsa. I think I need a different salsa than the one I used. Served it with a dab of sour cream. I had leftovers so, to change it up for another dinner, I added smoked sausage and served over rice without the sour cream but with a sprinkle of Parmesan.

Creamy Celery Casserole

This was delicious. So easy. I tried it because I had a lot of celery on hand. Wasn't sure if I would really like it or not. But it's great! I used fresh mushrooms and sauteed all the veggies with the celery. I also cut the recipe in half since there were only two of us for dinner. Thank you for a recipe with a "real" sauce and not a sauce made from canned soup. Much better, fresher flavor. I think I might try using this recipe as a sauce for a green bean casserole.

Caramel Bread Pudding

Southern Pecan Pie II

My husband LOVES pecan pie. Tonight he said this pecan pie was the best ever. Excellent recipe. I didn't make the homemade crust in the recipe. I'm sure it would be even better with that.

Sweet Russian Cabbage Soup

My update: Had leftovers in the freezer and just ate a bowl for lunch. Wow -- so good. original review: This is great soup. Full of flavor. Delicious. I didn't follow the recipe exactly, but didn't veer far. Just minor changes based on what I had on hand. Added a little thyme and marjoram. I did dice a large sweet potato and added it with the cabbage. After reading that some people found it too sweet, I started with about 1/8 of a cup of sugar. I ended up using almost 1/2 cup. My soup was not sweet. The sugar and vinegar just brightened the flavors.

Apple Pie II

Very good. I made changes as suggested by others. Orange juice, brown sugar and white sugar, cinnamon and a touch of nutmeg, tablespoon of lemon juice. I also added about 1/3 cup dried cranberries.

Mock Tuna Salad

Thanks for this great idea. I like it better than tuna salad and I love tuna salad. I think it is better to not expect it to taste like tuna. It doesn't. I made it like I would make tuna salad which is very close to this recipe. I used about 3 TBS. mayo and 1 TBS. sweet pickle juice. No mustard. I added 2 short ribs of chopped celery and 2 chopped hard-boiled eggs along with 1 TBS. of chopped sweet pickle. I grated in a bit of onion because I had no green onions. The best addition for me is 1/4 teaspoon of mild curry powder. YUM! Try it in your tuna salad, too. Great little flavor kick. I usually don't use onion or salt in tuna salad, but they were very good in this recipe.
