Yellow Squash Patties

GOOD, good, good and easy, too. And I don't normally like summer squash. I halved the recipe and used both yellow squash and zucchini. I made a horseradish sauce to serve with them. Sour cream, mayo, horseradish, couple of drops of hot sauce, and a teaspoon of sugar. But I also tried putting catchup on my patties and I loved that.

Easy Mashed Potato and Roasted Vegetable Enchiladas

This was so good. I made a few changes and made about 1/2 the recipe into a layered casserole, but the basic recipe is what made my dinner tonight a big hit. I used cauliflower, mushrooms, red bell pepper, and carrots. I also boiled a potato and lightly mashed it. Roasted veggies and enchilada sauce plus cheese is a great combo!

Cauliflower with Dijon Sauce

Delicious. I put it under the broiler for a few minutes after putting the cheese on top. We eat most meals meatless and I'm always looking for new and easy veggie recipes. This is a keeper.

Broccoli and Onion Casserole

I loved this. And it was easy. I used two 12oz steamer bags of broccoli. Cooked them in the microwave. I sliced one large onion and cooked that in the microwave with a couple of teaspoons of butter until tender. Made the sauce as written except added 1 teaspoon of dry mustard and salt and pepper with the flour. The breadcrumbs and cheese made a nice crunchy topping. This all fit into a 7x11 pan. Just because I had some, I sprinkled some sliced and toasted almonds on my serving. I am not a fan of the green bean casserole that is often served at Christmas. I'm bringing this to the next holiday get together.

Vegan Red Lentil Soup

Delicious! My first time to make a curry dish. I used fennel seed for the fenugreek seeds. I also used chicken stock instead of water. I think water might have been better. Will try it that way next time.

Sweet Potato Minestrone

Delicious and just what I was looking for, a yummy vegetable soup with sweet potatoes. I did add a little sweet chili sauce (Mae Ploy is the kind I like). Just enough for a hint of heat. I also used a small can of tomato juice in place of one cup of the broth because I wanted to use it up. I think the combo of the sweet potatoes and the garlic really makes this soup.

I had never heard of this dish. Glad I tried it. So good! I did what other reviewers suggested and sauteed the cabbage and onion. No steaming. Also added a dollop of sour cream to each serving. I used bow tie pasta because that's what I had. I like this much more than mac and cheese and it's easier, too.

Stuffed Green Peppers

What a delicious and easy way to serve stuffed peppers. Red bell peppers were on sale so I was looking for a new way to stuff them. I had 2 peppers and cut them in half to stuff as boats. I reduced the other ingredients accordingly. I think the Swiss cheese was a great idea in this recipe. I used a teaspoon of taco seasoning instead of chili powder. I did cover the dish with foil for baking. I liked spooning the heated tomato sauce over the peppers after baking. Thicker sauce that way. I might mix a couple of tablespoons of the tomato sauce into the rice and bean mixture next time but I am not convinced that will make much of a difference. Very tasty, fits our eating plan well, and so easy -- I think this will become a go to recipe for me.

Old Fashioned Mac and Cheese

This is the best recipe I've ever used for Mac and Cheese. Super creamy and lots of flavor. Tonight was my first time to make it. I love the Swiss cheese in it. The sharp cheddar I used was not flavorful enough. Next time I will use a better cheddar! I added about 1/2 teaspoon of ground mustard. I added my onion to the butter and sauteed it very briefly and then added the flour, mustard, salt & pepper. Other than that, followed recipe as posted.

Eggplant Parmesan I

I love this recipe. FAR better than breaded and fried eggplant. And so much easier. The fresh basil is great, but I'm sure it would be delish with dried basil, too. My eggplant made one layer and I used sliced mushrooms for a second layer. I only needed 24 oz of pasta sauce.

Creamy Cauliflower Salad

Delicious! I blanched my cauliflower. I just don't like it raw. I also added some leftover broccoli. This is a great salad. I may try a little less sugar next time. I agree with others that this would work with lots of different veggies and adaptations. I want to try adding red onion.

Bev's Mac and Cheese

What an easy way to make mac and cheese. And easy to adapt to one's own taste. My husband thought this was great and he loves mac and cheese. I boiled the macaroni in the microwave, too. I didn't have any problem with it being too much flour. However I did nuke and whisk the mixture without the cheese a couple of times. I then added the cheese after the mixture was smooth and thickened. I also added 1/4 tsp. dry mustard to the flour and added a little more cheese.

Tuna-Stuffed Avocados

So much better than I imagined. And I thought I would like it, of course, or wouldn't have tried it. My husband loved this. Great flavor combination and so quick and easy. I don't like celery seed so I omitted that and added a small stalk of finely chopped celery. This would make a fantastic sandwich on really good bread -- spread on the tuna mixture, slice the avocados and layer on with lettuce and tomatoes.

Eggplant Bake

I love eggplant but I did something wrong when I made this dish and I'm not sure what. My eggplant was bitter and I did sweat the slices which I have never done before. But the other flavors were all great and I will try again. I think I won't do stacks though. I couldn't get the feta to stay on the stacks. I used the leftovers today to make a hot sandwich minus my bitter eggplant. Delicious.

Homemade Dog Food

I tasted this and it's delicious. No wonder my two dogs scarfed it down. I used my potato masher to break up the ground turkey in the liquid. I substituted rice milk for some of the water because the brand I buy has calcium in it. I also added eggs with omega-3 and ground the egg shells and added them. Next time I make it, I will vary the veggies as broccoli can irritate a dog's stomach. Broccoli is good for dogs as long as they don't eat very much at one time. I have read that broccoli should not be more than 10% of their daily food. I don't expect this one recipe to be all the nutrition my dogs need. But it is an easy recipe with lots of good nutrition. My two dogs are Bichons so this makes a lot of food for them. I put it in the freezer in small containers.

Thai Peanut Dressing

Delicious. Just what I was looking for to make a salad. The recipe is great as is, but I also checked out the customized version " Asian Style Peanut Sauce By: jsheridan1956" and thought I would like some of the ingredients he used. So I added a little more Rice Vinegar, some Mae Ploy sauce, a little honey, and a teaspoon of powdered ginger (of course fresh would have been even better). YUM! I could drink this stuff. My salad included green onion and cilantro so those flavors added a lot to the dish.

Margie's Sour Cream Pork Chops

Not your same ol' same ol'. Tender chops that were very good. Very moist. I used white balsamic vinegar. I might use just a tad less vinegar next time. I will definitely make these again.

Lentil and Sausage Soup

Exactly what I wanted to make for dinner. I had some Italian sausage and lentils and was searching for a soup recipe. This was delicious. I used my slow cooker. I added some frozen chopped spinach just because. I also gave each bowl a squirt of lemon juice and a sprinkle of Parmesan cheese. Hot bread and this hearty soup made for a great cold night's dinner.

Texas Pork Ribs

I love this rub. After letting the ribs soak up the flavor overnight, I throw them in the slow cooker with just a little bbq sauce for a few hours. I usually cook about 3-4 lbs. and make 1/2 the rub recipe. When they are tender I put them on a foil-lined pan, paint them with some more sauce (or the sauce in the slow cooker) and put them in a hot oven until the they are jewel-like from the glaze caramelizing. I hate to cook outdoors and this method makes for some great ribs. (I like to eat grilled food, I just hate to be the outdoor chef!)
