Makhani Murgh (Butter Chicken)

Faster version of Butter Chicken. One could use about 2 ts of Garam Masala as well, instead of the cardamom pods, cloves, cinnamon to make it less work. I used cream, but next time I will use Greek style Yogurt for a creamier texture. Did not have Serrano peppers so used hot Sriracha paste and also used Ghee instead of regular butter. I simmered this for about 30 minutes. Also sauted half an onion. (A note about the ingredients: calls for fenugreek 'leaves' but the directions refer to fenugreek 'seeds'?? I used seeds but did grind them a bit) Will make again.

Thai Green Curry Chicken

When I try a new recipe I like to make it as is. Did not particularly like the chicken dredged in flour and felt it wasn't necessary to do so as it made the curry too thick. We have our green curry dishes with fried naan to soak up all the great sauce..this was just too thick and had that 'flour taste' to it. Also felt that there was no need to add the soy sauce at the end..fish sauce is salty enough and the dark soy ruins the colour of the dish.

Chorizo and Lentil Stew

To make this a meal in a dish, we added sliced carrots, gr. peppers and pork loin in bite size pieces. I had a chorizo sausage on hand and just used it sliced. Used chicken broth instead of water. I didn't have dried lentils so used a can of black beans and it was very good. We did increase the spices though, especially the curry. Finished this with chopped cilantro. Very nice!

Burgundy Lamb Shanks

The lemon peel gave this a great taste. I used about a cup of red wine and a cup of beef broth. Served this over Quinoa for a change. Did cook this in a covered dutch oven in a slow oven(320) for about 3 hours. 'Fall off the bone' goodness! Thanks for the recipe.

Chicken Quesadillas

This recipe ,as is, is just ok. Most reviews who gave it 4 or 5 stars, had altered it in some say. This needed something. I sauted the chicken with peppers, onions, mushrooms, seasonings and then added a good salsa to the mixture and let simmer for a bit to thicken it up. Pesto sauce would work as well. I used a little olive oil on the outside of the tortillas. Place cheeses on the one half, added chicken mix, then more cheese (added Feta too) Folded in half and put into oven. Letting the quesadillas sit for a bit after taking them out , helps to 'set' the cheeses and holds them together much better for cutting.

Chicken Pesto a la Lisa

Fast,easy and delicious..and that makes a '5 star'. Did not use the Parmesan as I felt the Feta made it salty enough. Did add fresh tomatoes from the garden and some diced red sweet peppers.Fresh Basil is a must. It's one of those dishes you can play with. Thanks for the recipe Lisa.

Baked Lamb Chops

I marinated 1" chops in worchestshire, soya sauce with rosemary and minced garlic.Then coated the chops in egg and Panko crumbs (available at an Asian market). The rosemary and garlic added something I think would have been missing other wise. Cooked for about 40 min. They were perfectly cooked. (I tented them and let them sit for a few min.)Tender and juicy.

Restaurant-Style Buffalo Chicken Wings

Made these using skinless, boneless, chicken breasts. Cut them into 'chicken fingers'. The flour mix was great..did add garlic powder and more cayenne. I no longer own a deep fryer so did fry them in my wok using canola oil , about 4 min a side. They came out crispy on the outside and tender on the inside. I used 1 cup of my favorite new HOT SAUCE..'Valentina' made in Mexico and it is Hotttt! and has a great flavour as well. I think this will be my new wingless 'Hot Wings' recipe from now on. Less fat - more flavour. Thanks for the recipe!

Baked Tortilla Chips

These were done in about 7 minutes total. I used fresh lime the first time I made them and fresh lemon juice the second time..couldn't tell the difference. Also used olive oil and 'cajun' spice instead of chili..tasted great..so one can be flexable on this recipe.

Sesame Pork Tenderloin

Very moist. Cooked to perfection at 40 minutes and about 8 minutes standing time. Next time I will divide the marinade, saving half for a sauce at the end to put over sliced pork. Thought the sesame flavour could have been a bit stronger..so may add sesame oil next time.

Fettuccini Tomato Rustica II

Did cut the oil back to about 1/3 cup in the sauce and it was very good. I sauted the chicken in about 3 tbs oil and a splash of white wine. Very Moist. Tasted very Italian..would have given it 5 stars expect that if one used 1 cup of oil it would be too oily for our taste( and I love olive oil)

Curried Rice Pilaf

This was fast and easy and delicious. all things that make it 5 stars. Didn't have green onions on hand so just used sweet onions diced...turned out fine. Added a pinch more curry ..as we loooove curry.

Sweet Potato Casserole VI

Used yams instead of sweet potatoes.this got good reviews from everyone at the Thanksgiving table. Cut back on the sugar to 1/2 cup and I still found it too sweet. Will do 1/4 next time. Cut back on the brown sugar in the topping also to 1/2 cup.

Spicy Grilled Shrimp

I couldn't believe how mixed the reviews were over this recipe..so had to try it for myself..we made this using about about 1 1/2 ts of coarse salt. (this was a dinner for 4 and all agreed)...it was unfortunately too salty for our liking. (and I'm a salt fan)..marinated the shrimp for about half hour and used Old Bay instead of cayenne and omitted the paprika. Used bamboo skewers and threaded the shrimp for easy grilling. We will make this again because the prep was so fast..but will reduce the salt to 1 tsp, and will use the paprika next time as well. Loved the idea of making the paste with the salt and garlic.

Chinese Chicken Soup

We enjoyed this very much. Did make a few changes though. I added sliced dried garlic and chopped fresh mushrooms. Instead of lettuce, I used chopped fresh spinach-the taste was great, and stirred in 2 fresh eggs at the end ( like an egg drop soup). I only used 1 1/2 tsp of Asian chili paste and believe me that was HOT enough! I used wun tun noodles, but served the soup OVER them. It works very well over rice too. This soup had a wonderful flavour. Will make again. Thanks for sharing.

One Bowl Brownies

If a recipe is easy to prepare and the taste is good..that's a good recipe to me. This was one of those. Easy to do. The brownies were not dry. They were not to 'cakey', but were chewy instead, and not gooey. Made it exactly as presented. Don't overbake, 35 min is enough time, maybe even less. Will make again.

Baked Seafood Au Gratin

This was just too soupy for us. Will make this again but will reduce the amount of liquid from 4 cups to maybe 3.Would rather have more seafood than a milk sauce.

Easy Sugar Cookies

These were easy to make. I did not need to refrigerate them..they rolled easily into balls. the first batch I flattened with a fork. the second batch I did not and they were much better..softer and fluffier in the middle. Only needed to bake them for 8 min. Will make again.

Rum Sugar Cookies

the dough was very sticky and was unable to roll out very well..the cookie cutters stuck. I eventually just spooned the dough out and added chocolate spinkles. My husband said the taste was fine.
