Roasted Lemon Herb Chicken

Excellent flavor, although it is tricky to keep the spices on the chicken when drizzling the oil/juice combination. Otherwise, the flavors come together very nicely for a juicy baked chicken.

Slow-Cooked Tamale Casserole

Authentic tamale taste - we also topped it with sour cream. My husband doesn't like black olives, but he loved this and I'm not even sure he knew they were in there or cared!

Fragrant and Healthy Carrot Cake

I have to say I was stunned by the outstanding flavor of this cake with so little sugar - the ingredients are wonderful for those who are diabetic or just looking for healthier varieties. I did not use the carob powder. What makes this special are the figs - they really stand out. Excellent taste and no guilt enjoying this cake!!

Honey Glazed Ham

For this recipe, it's not so much as the ham as it is the glaze itself that is the star. I did not use a ready to eat ham but rather bought a standard bone in ham that was not spiral cut or glazed. This glaze really made the smoked ham special and unique....everyone flipped over the taste! Not to mention the ham I bought saved me bunches of money and I was able to buy a much bigger one than the convenience hams (unless that is what you are looking for...).

White Chocolate Blueberry Cheesecake

I decided after reading the reviews to make this recipe exactly as listed with all ingredients, hoping that it would set properly. If you leave it in the oven with the door only slightly cracked, that will finish setting the cheesecake - just make sure to use the 10 inch springform pan as stated or it won't set. Chilling it in the fridge is also crucial when you take it out of the cooled down oven. Very rich (and I even added a little extra white chocolate to the mix) and creamy. The blueberry sauce is a really nice complement to the white chocolate.

Maple Salmon

We love salmon, but this is by far the BEST salmon recipe I've ever tried. My hubby and I almost fought over who was getting the rest of the fillet (and we had to fight off our 4 cats in the process!!!). The maple syrup definitely makes this special.

Easy Mint Chip Ice Cream

This is a great recipe - easy to make and very tasty, but I followed another reviewer's suggestions and used the mint rather than peppermint extract. The latter I've used in baking quite a bit and it does have a much different flavor than the mint. The mint extract was far superior. We also used regular whipping cream rather than heavy and the canned milk was fat free. We not only tried this with mini chips but also shaved a chocolate bar, which came out very nicely rather than cold small chunks. Lastly, we did not put it in the baking pan but made it in our homemade ice cream maker and it came out fantastic! A huge hit with family and friends while camping!!!

Georgia Peach Homemade Ice Cream

This ice cream is absolutely one of the best homemade varieties I've ever tried. Every year when we travel through Georgia, we stop at a peach plant off the interstate to buy tons of fresh peaches to bring home - and this ice cream is almost identical to the one they make at their cafe. The only changes I made were that I used fat free for the 2 canned milks and 1 % milk not whole - all to cut down on the fat content. The batch froze extremely well in our home machine. We made it twice in one week it was so popular with friends and family while our peaches were still fresh!!

Rum Cake II

My husband flipped over this rum cake. Usually he likes to buy those famous store bought brands but they are so small and grossly overpriced. So I tried this one and it certainly didn't last long. One thing I did change - I used pineapple rum since that is what we had on hand and it was quite tasty that way. Super moist and the glaze soaks in very nicely, which I have found to be a problem with other rum cake recipes I've tried - but not this one!

Pistachio Cream Cheese Fingers

Very creamy and unusual cookies - my hubby loved them. The only thing I omitted was the chocolate glaze because I felt it overpowered the wonderful pistachio flavor. Rolling these is a little tricky but worth the effort.

Thai-Style Peanut Sauce with Honey

Risotto with Tomato, Corn and Basil

I love risotto, even though it takes time and love to make it right - and this one reminds me of a risotto we had at Emeril's restaurant a few years back. I did substitute half and half for the milk to make it creamier and frozen corn to keep it easy - otherwise, this is a wonderful dish we've enjoyed several times.

Broccoli Risotto with Cream and Lemon

This is a recipe I've cooked several times and just love the flavors in this risotto. I used a Romano/Parmesan/Asiago cheese blend and frozen baby broccoli florets because I did not want big chunks/large stalks in the risotto. Like other cooks, I used less cream to cut down on the fat as well as regular whipping cream rather than the heavy version. Absolutely delicious!

Balsamic Glazed Carrots

Very tasty and tender. We love cooking with balsamic vinegar, but you have to buy a good quality vinegar otherwise it will taste too bitter. We also used the sucralose/brown sugar blend to cut down on some of the calories, even though the amount of sugar is low...also because we added more than it called for. The baby carrots that are pre-peeled and cut cook quickly.

Antipasto Pasta Salad

Very nice, flavorful salad...I used wagon wheel pasta. Especially loved the diced Asiago cheese because it has such a nice sharp flavor to complete the chopped meats.
