Mushroom Blue Cheese Turkey Burgers

These are terrific! We used extremely sharp cheddar cheese instead of blue cheese (because we were out of blue cheese) and put it directly into the mix. We also browned the onions before adding them to the turkey. Everything was delicious. I don't eat beef and am always looking for a new way to spruce up some turkey. Thank you for the recipe.

Puerto Rican Coquito

There are many different ways to make Coquito, depending on where you lived in Puerto Rico, but this recipe came out just like I remember it tasting. Thank you for posting. It makes me homesick!

Simple Scones

I've tried several different recipes for scones and this one tastes the best. The most wonderful thing about this basic recipe is how versatile it is. Instead of 1/2 cup Sour Cream, I've used various flavors of yogurt, mashed banana, blackberries boiled down with seeds strained out and then thickened with corn starch, and even guava paste melted down with some water added. In order to get a denser consistency, I use 1 cup all purpose flour and 1 cup bread flour.

Fresh Ginger Cookies

Basic Biscuits

These always turn out perfectly and my neighbor told me they are even better than her grandmothers - but I'm not supposed to tell anyone... I should mention that I use salted butter instead of shortening. Once the dough is flattened out, I flour, fold and flatten - repeat twice more. This will give the biscuits the layers that make them light and wonderful. I used to think of this as over handling and thought it would make the biscuits hard, but not so. oh - and one more thing. I don't use a biscuit cutter. I use a sharp knife to cut each one out. This keeps the edges of the dough from smooshing down and preventing them from rising.

French Leek and Ham Shepherd's Pie

This is fantastic. I made it exactly as directed and it turned out great. When I went to visit my parents, I made it for my extremely picky father. My mother said, "don't let it hurt your feelings if he won't eat it. You know how picky he is." He ate it everyday for three days until it was gone.

Chicken Salad

This is the perfect recipe for using up left over roasted chicken. I use fresh parsley and freshly grated ginger, but otherwise stick to the recipe. It's delicious every time.
