Sausage and Egg Casserole

I love this recipe. When I make it I use an Italian loaf bread that I cut into cubes. I grease a 9x13 pan and put cubed bread on on bottom of pan ( generally it takes about 3/4 of the loaf). Next I put the sausage (which I cooked with onion) on top of the bread followed by the cheese. Since the bread I am using is much bulkier I usually use at least 10 eggs and more milk. I pour this over the layered casserole slowly until it soaks all the way through. If you think you need more egg and liquid you can add more. I put it in the fridge overnight and voila its a wonderful strata that everyone enjoys! Happy brunching y'all!

Bacon Spaghetti

I gave this recipe 4 strs but modified it and my family loved it. I fried the bacon and left a few tablespoons of bacon drippings in skillet. I then added the Olive Oil and sauteed the garlic. Afterwards I added fresh baby spinach and parsley to the same skillet until it wilted and stirred the bacon pieces back in. Cooked spaghetti was then tossed with the ingredients in the skillet and transferred to a large serving dish once completely coated and mixed. Once placed in large serving bowl I then mixed in about 1/2 cup of parmesan cheese. Everyone loved it and wished I had made more.

Slow Cooker Pulled Pork

My family loved this recipe. I used a three pound pork tenderloin and seasoned it with garlic powder and pepper. I poured 1 to 2 TBSP of liquid smoke ditectly on tenderloin before I added a 20 oz bottle of rootbeer. I turned slow cooker on low before leaving for work and it cooked about 8-9 hours before I got home and was able to shredd and add sauce. It was still perfect.

Easy Chicken Enchilada Crescent Bake

This was a huge hit with my family. I usually make beef enchiladas with flour tortillas but I really liked the crescent roll flavor. only change I made was I seasoned chicken with taco seasoning packet from store instead of enchilada sauce.

Orange Blueberry Muffins

My family loved these muffins. Next time I will add more oil to make them moist as thet were just a little dry, but they were super easy and tasted great.

Pasta Carbonara

I love this recipe. I have cooked traditional carbonara many times but enjoyed making this one better. You can actually place this in a warm oven if not ready to serve immediately and the ingredients do not break down. I only added abouth half the bacon grease, though, and thought it was great.
