Chicken Enchiladas II

Reviewed: Nov. 24, 2012
Great. Entire family liked it. I felt that it could have had a little more sauce. But really good overall.

Baked Tilapia

Reviewed: Oct. 24, 2012
The fish was cooked nicely...and came out nice and moist. However, to my husband and I, it tasted like fish with sauce on it. The flavours did not seem to meld together to compliment one another. My daughter, on the other hand liked it. I will say though, that I took the advise from some of the other reviews and used tomato sauce instead of tomato paste. Maybe that's what made the difference.

Too Much Chocolate Cake

Reviewed: May 16, 2012
Have made this three times now...and every time has been a big hit! I must warn you though...be prepared to be craving chocolate cake for a long time after...the smell is so good, and seemed to linger long after the cake was gone, that I kept wanting to go a cut a slice, only to be disappointed that there was none. So chocolately, rich and moist. Will satisfy any chocolate lover. I used Betty Crocker Devil's Food cake mix, didn't give the "cake box" taste as the Duncan Hines mix did. Need 1 box plus 1/3 cup from another mix to have the right amount though. I also used Jello brand plain instant chocolate pudding - needed 1 and a 1/2 packages. I do use the full cup of oil. I tried it with full fat, and 5% fat sour cream. Both were excellent. Enjoy!

Jalapeno Popper Spread

Reviewed: Oct. 14, 2011
Everyone loved it. We all agreed that it really does taste like jalapeno poppers. Followed recipe..except...heated in microwave, then put grated parm on the top mixed with a little panko bread crumbs, like so other reviews suggested...then put it under the broiler for a min. or so, until nice and golden brown. Excellent - everyone wanted the recipe. Couldn't be easier either. Thanks for a great recipe.

Texas Caviar I

Reviewed: Oct. 5, 2011
L oved this. I must say however, that I was the only one who did. My husband, my daughter, and our two guests, did not care for it all that much. It was the cilantro that they did not care for. But I did love it!

Foolproof Rib Roast

Reviewed: Dec. 13, 2010
This was a great way to cook a roast without any fuss while companies over. I used a 4.5lb Prime Rib roast. Followed cooking directions exactly up until the final cook. I turned the oven back on to 375 and after 10 min. I took the internal temp...it was 129 so I took it out. After letting it rest for 15 min. I carved and served. The roast was med throughout. There was no ring of med-well to well done....just cooked evely througout! I tend to like mine on the rare side, so next time I will probably cut the original time down to 45min. Thanks for a great way to cook a roast!

No Bake Peanut Butter Pie

Reviewed: Dec. 10, 2010
Everyon loved this recipe!! I loved it too. Very easy and delicious. I also followed some advice and used a predone chocolate crrumb base. I mixed cut up peanut butter cups into the filling. On one pie I topped with grated Crispy Crunch (like Skor bar), and on the other more cut up peanut butter cups...both were excellent. Thanks for the recipe.

Absolutely Best Brownies

Reviewed: Oct. 24, 2010
My family liked these...but I found them a little dry (even though I cooked for 5 min. less then recommended - could have done with even less time in the oven). I did like the richness of the chocolate flavour though.

Cheeseburger Soup I

Reviewed: Oct. 16, 2010
It was o.k. Suprisingly, my kids did not enjoy it. I just didn't think there was enough flavour...I even added extra spices to it, but found there was something missing.

Cocoa Banana Bars

Reviewed: Oct. 16, 2010
Very moist, and easy to prepare. I would call this a cake, not a bar (which I would consider much more dense). I also found it a little bit too sweet. I would cut back on the sugar a little next time. Overall, a nice 'snack cake'.

Spiced Quinoa

Reviewed: Oct. 13, 2010
I really like this recipe. I don't eat curry very often, so it was nice (although, I did add a little less). I will also try it without the curry, I'm sure it will be good as well.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Oct. 7, 2010
My husband, kids and friend thought these were great. I thought that they were o.k. I found them a little too sweet, and a slight after taste from the pudding mix I'm guessing. They weren't bad, just not worthy of award winning! However, as I mentioned my husband and kids loved them, and asked me to make them again. I halved the recipe...I should have made the whole recipe, as they went very quickly!!!
