Savory Herb Rice

This recipe is a keeper. At first I was a bit skeptical when I saw how simple the ingredients were, but after trying it, it is truely a winner. Very easy to make and does not fall back on flavor. Even my toddler loves it!

Banana Nut Bread II

This bread was really delicious in the bread machine. I tried 1lb first for testing, but there was not enough to go around because everyone loved it, so I ran out to get more bananas and will be doubling the recipe this time. I didn't premix the ingredients as stated, I just mashed the bananas before putting them in, then placed all the ingredients as listed in my machine and it came out great. Also I added raisins instead of walnuts, but I'll try the walnuts next time. Very yummy.

Cheesy Catfish

This was really the best, I did as everyone said and used seasoned bread crumbs instead of the flour and it was delicious! In addition i allowd the filets to marinade in a mixture of blended chive, a bit of garlic, pepper and lemon juice before dipping it in the egg mixture and. I also used cheddar and not parmesan and allowed it to bake for 30 minutes and it tasted great. However next time I will dip the fish in egg first then flour then egg and breadcrumbs. In that way I'll get more to stick to the fish.

Applesauce Bars

These bars were just as others said, TERRIFIC!!!. I doubled the amount and added in the mixture 1 teaspoon vanilla essence, 2 teaspoons cinnamon, 1/2 teaspoon mixed spice, and a dash of nutmeg. I also added 1/2 teaspoon lime juice into the frosting mixture. Yummm! Delicious, moist and close to the taste of a carrot cake. Next time I'll add raisins as others recommended.
