Fluffy Peanut Butter Frosting

This frosting is the perfect peanut butter frosting! So simple to make and so tasty. I like my frosting on the sugary side rather than the creamy side and this did not disappoint. I was usint the frosting for whoopie pies so I made it a little stiff, too, so it would hold up to the cakes. Love, Love, Love it...wouldn't change a thing!

Slow-Cooker Barbecue Ribs

What a great recipe!! So easy and so tender and tasty. I took the advice of some before me who suggested replacing some of the ketchup with bbq sauce. I was only making one rack of ribs since there are only two of us, so I cut all the ingredients in half for the sauce. So when it came to the ketchup, I did only 1/4 c of ketchup and 3/4c of bbq sauce (I used Bulls Eye). My husband and I both loved these ribs. Came out wonderful! Definitely will be going into my keeper recipe file.

Andy's Spicy Green Chile Pork

I followed the recipe exactly except for I cut the two serranos in half before throwing in hoping to get a little more spice out of them. This came out perfectly moist and full of flavor! We made soft tacos with them on night one, adding a little cheese, avacado, and sour cream. No sauce needed as we didn't want to take anything away from the flavor of the meat! This will definitley be another go-to slow cooker meal for my husband and I. Loved it!

Pepperoncini Beef

My husband and I loved this recipe! We took the advice of some earlier reviewers and added a can of beef broth and some onions for a little more flavor. We made sandwhiches with it the first night and made quesidellias the next night....both were amazing! This meat is really versatile and it has just a small bite from the peppers. Definitely a keeper!!

Slow Cooker Taco Soup

My husband & I loved this. It reminded of us of the flavors in the chili served at Wendy's. We just used turkey instead of beef, pinto beans in place of the chili beans, and the tomatoes also had chilis in them. So easy and quick to prepare and so delicious to come home to a warming bowl topped with corn chips, sour cream and shredded cheddar. Yum!

Slow Cooker Italian Beef for Sandwiches

This was Yummo! Absoutly easy to make and so worth the time it takes to cook in the crockpot! I cut the recipe in half using just 2.5 lb sirloin roast, as there are just two of us. Night one we used it to top hoagie rolls with grilled onions and green pepper, banana peppers and provolone/cheddar cheese. Tomorrow night we are going to take the au jus it makes and turn it into a gravy and top some mashed pototes with the remainder meat & the gravy! This is definitely a recipe that will stay at the top of my list!! Enjoy :)

Mint Chocolate Chip Cookies

I made these for a Christmas Eve gathering this year and loved them . So easy and so soft and delicious! My store did not carry the creme de menthe chips so I just used the chocolate chunks and that worked just as well.

Honeyed Pork Chops

First off, definitely do not need to bake these for one hour. I only baked for 45 minutes and they were still dry. I think I'll shoot for 30 minutes next time. Other than that, these chops had good flavor. I basted the chops with the sauce about 3 times and also baked them on top of slice onions instead of putting the onion in the sauce. The onions were so good served along with the meat.

Spicy Garlic Lime Chicken

I made this tonight, along with Baja Stuffed Potatoes also on this site, for dinner. It was a quick and easy recipe that did not need alot of babysitting while I was fixing the other recipe. My husband and I really liked it although I felt it was a little salty - I used kosher salt, which made have made a difference so I will adjust for next time. Great flavors though. I also flattened the chicken breast and then split in two to make smaller portions that would cook up a little faster and go a little further. Definitely a keeper!

Oven Fresh Seasoned Potato Wedges

Was looking for a quick dish to have as a side to hot dogs for an easy, fast dinner when I came accross this recipe I had saved. These were so fast coming together and really tasted good! Made them exactly as the recipe called - wouldn't change a thing and these will become a staple in my house!

Pico de Gallo Chicken Quesadillas

I loved these. Making Quesadillas this way made them seem more like a dinner than just a snack. There was a little more substance than the way I usually just throw some together. Delicious and definitely a keeper!

Baja Stuffed Potatoes

These were good, although a little bland. I even tried to add some seasoning after reading previous reveiws to do so. I added a little cayene and cumin and also salt & pepper. Could have still stood a little more - will adjust if I make again. My husband really liked them - which is surprising so will probably make sometime again.

Double Layer Pumpkin Cheesecake

This was easy to put together and very tasty. I'm not big on cheescakes without some type of chocolate involved, but this was pretty tasty. The pumpkin had just the right spices to make it very tasty. Will probably make again for future holiday gatherings.

Buffalo Style Chicken Pizza

This was just okay for me. I don't really like Blue Cheese and my husband really doesn't like ranch so we split that right down the middle. I definitely did not use as much dressing as recipe calls for. Just put a thin layer on. We added some grilled onions and some left over black olives we had on hand. Also, did not use the butter - just wing sauce to keep out some of the fat that I really don't think would have added any value. My husband really liked it but I really just thought it was okay. It was almost like a piece or two was enough.

Spanish Rice Bake

This was pretty good. Easy to come together. I didn't have any problem with the rice cooking. It didn't say to cover when cooking, which I was skeptical of with rice, so I ended up not covering it anyway. Rice cooked fine at a simmer for 30 minutes just as the recipe called, stirring 3 or 4 times within that time. I also just cooked the stove-top part in just one deep pan, but did transfer to a casserole dish and baked as it said. My husband really liked it, but to me the chile sauce made it have too much of a sweet taste, which I wasn't fond of. But other than that, not bad. Just a taste preference for me.

Tater Tot Taco Salad

This was okay, definitely nothing to brag home about. I would much rather just make a salad with the traditional tortilla chips. I really think if I didn't have chips but did have tater tots I still would just make up a salad without anything rather than use the tater tots again. The tots didn't add anything to the recipe except grease.
