Chicken Enchiladas II
All these reviews stand alone so I want to add one more tip. The corn tortillas can be made soft and pliable without any oil. Place 3-4 tortillas between two damp paper towels and microwave about 2-3 minutes. They will soften up and roll up without cracking. This eliminates the oil dilemma. I live in Texas and corn tortillas are the ONLY way to make really delicious chicken enchiladas.

Suki's Spinach and Feta Pasta
This was delicious! I didn't have any penne pasta, so used whole wheat spaghetti cut up - I think any pasta would work. Also added some dried basil - fabulous!

Baked Omelet Squares
This is a great recipe and very forgiving on ingredients. In my attempt to make this lower fat, I used just about 2T butter to saute the onions, used Canadian bacon instead of ham, instead of the jalapenos I used bought fresh salsa (left over from company a couple nights before), used 4 real eggs and 8 egss equivalent (2 cups) of egg substitute, skim milk, and reduced fat Swiss cheese instead of the cheddar. It was fabulous and no one knew I had made it low fat!
