Baked Corn
I've made this a few dozen times and it's always a great hit at family functions. If you're lucky enough to have leftovers, it's great cold as well. I usually reduce the butter to 3/4 cup and increase the sour cream to 3/4 cup. I've seen lots of questions regarding adding or not adding the corn water -- I do not add the water from the canned corn and it turns out great.

Seared Sea Scallops
This is a great recipe and the scallops turn out just fine if you sear them properly. I heat the olive oil on high heat with some minced garlic, but I reduce the temperature between medium and high when I add the scallops and turn them only once. I've also prepared this dish by adding a couple of tablespoons of Old Bay to the mix, rather than seasoning salt, which gives it a nice "seafood restaurant" taste.

Ginger Glazed Mahi Mahi
Excellent. Your guests will think you really labored over this dish -- it is very flavorful and looks great. I've always utilized ground ginger, as I simply never have fresh ginger root on-hand and use 3 tablespoons of minced garlic, rather than crushed. I've also used this recipe on tilapia, and it's superb!
