Hudson's Baked Tilapia with Dill Sauce
yum yum! My Suggestions for sauce: (1.)Make the DILL SAUCE ahead of time to seal in flavors (2.)Use 4 TBL of fresh dill instead of 2 *Suggestions for Fish* (1.)After seasoning with s&p & cajun - dip filet in flour (just a little not too much) (2.) preheat EVOO & 1 TBL Butter on Med-High (3.) Fish will get nice and crispy edges!! YUM I love the combo between the crunchy spiciness of the fish and the sweet dill sauce. I also highly recommend you make this with ASPARAGUS. You will dip the veggies in the sauce as well.

Mini Cheesecakes
GREAT RECIPE! Such a HIT with GROUPS. People request these from me for their birthday, party, Thanksgiving.... you name it. After may times of making these I did customize just a little... 1. Add Vanilla Extract (2 TBL) 2. Use 1/3 Fat cream cheese (Trust me you will not know the difference and it brings the calories WAY down.) 3. Try 1 batch with an OREO cookie at the bottom 4. Not a fan of cherry pie filling so I slice a few strawberries thing and "fan" them on top. You can even roll the strawberries in sugar first. yum yum. Anyway, thanks for a great recipe!
