Mexican Shepherd's Pie
Beginner's tips: (1) I used 1/2 tsp minced garlic with the onions and beef, so it should be about 1/8 to 1/4 tsp garlic powder. (2) 1 tsp salt and 1/4 tsp pepper. (3) You'll need 1 egg and 1/3 cup milk for the muffin mix. (4) It's perfect in an 11x7 pan! There's not enough food for a 9x13. (5) You can start preparing the muffin mix when you add the taco seasoning and water, so the batter can stand for a few minutes. If you follow the recipe to a T, and cook the ingredients over a medium-high heat for the specified times, it won't be too watery. This is delicious! The first time I made it I forgot the corn so I put it on top of the batter before baking it. I had to microwave it for 2 minutes to finish cooking the batter. It looked weird but still was quite tasty. Thanks for a keeper!!
