PHILLY Lemon Cheesecake

I made these in a muffin tin and got 12 mini cakes. Friends that tried it liked it but it wasn't amazing, just good. Not sure if I'd make these again.

Award Winning Soft Chocolate Chip Cookies

These cookies are amazing! If you like a crunchy chocolate chip cookie than this recipe is NOT for you. This is a soft cookie and tastes just like Mrs. Field's. I added semi sweet chocolate chunks and halved the recipe and got 41 cookies. I also had to bake the cookies for the full 12 minutes, otherwise they were too gooey inside and not cooked.

OREO Mini PHILLY Cheesecakes

These are very tasty and quick to make. A good treat for adults and kids alike. However, I gave it 3 stars because the Oreo cookie did not soften after baking. In fact, it was just as crunchy and hard after baking as it was before baking. Next time I will try soaking the cookies in milk or maybe even warm coffee (if serving to adults) to see if this makes a difference. The alternative would be to use Oreo crumbs and make your own crust. Another lesson learned, is go ahead and fill the cupcake liner with batter almost until the top. I filled mine 2/3 of the way and the batter did not rise as much as I would have liked.

Spiced Mixed Nuts

Wow! These are easy and delish! It was my first try and there are few things I'll do differently next time. First, I bought salted mixed nuts which contained peanuts and the skins. Not a good idea unless you don't mind eating glazed skins. I was able to "sift" the skins out of the peanut mixture but this was an extra step and a bit of a pain. Next time I'll buy a mixture without peanuts. I also added more of the spices (doubled the amounts) and it wasn't overly sweet or spicy. I omitted the all spice and cloves and substituted with cayenne and paprika. I did notice the final product was not "glazed" as the recipe suggests. My batch was coated but dry and not sticky. They separated nicely which was a good thing. Not sure if this is how they are supposed to be but they are delicious and worth repeating!
