Chicken Marsala

I make a very similar version of this recipe. I flour the chicken without the oregano. Then I lightly brown the chicken, set it aside, sauté garlic cloves, then add the mushrooms and sauté the mushrooms. To the mushrooms I add about a cup of Marsala. I reduce the wine by half add about a cup of cream, return the chicken back to the pan and warm. Serve with rice.

Pumpkin Roll Cake

This cake grows on you. I've made this three times, and every time it turned out great. I made this for Thanksgiving and brought it to my mother-in-laws, everybody was surprised that I made it myself, it was both a beautiful presentation and very good. I am going to make it for Christmas too. perhaps I'll decorate it with some frosting holly, and berries.

Parmesan Chicken

I have been making this for many years. My grandmother was Sicilian and had a slightly different version of this recipe. I have changed it somewhat. I use half breadcrumbs half Italian seasoned panko crumbs, the Parmesan cheese, and I fry the pieces in olive oil. If you want make a lemon butter sauce and serve along with the chicken. This recipe works well using very thin slices of sandwich steak. pound the the beef as you would the chicken everything else is the same. It's one of my family favorites.

Movie Star Popcorn

I make popcorn with olive oil and add butter. Adding butter to the pot before popping is an interesting alternative. Olive oil is healthy and imparts a great buttery flavor.

Scrumptious Salisbury Steak in Mushroom Gravy

i wanted something different and easy and this fit the bill.This was a very tasty recipe. I didn't have bullion cubes, so I used beef broth instead, I used fresh mushrooms and I added heavy cream instead of milk, about a half of a cup. I served it to my husband who liked it very much. I will definitely serve it again.
