great idea! I used light cream cheese, replaced the sour cream with cottage cheese, reduced the shredded cheese by half and added 1/4 cup of hot salsa for more flavor. Nice healthy alternative to other hot dips! rave reviews from the family as well :)

Bean Quesadillas

This was great! New stapel in our household. I dont follow the recipe exactly, because Im lazy :) I take the beans and cook them with 1/4 cup of tomato paste, a bit of honey, and lots of chili and taco seasoning. Mash slightly to break up the beans and then spread into tortillas and top with some cheese. I bake these in the oven until the tortilla browns a bit. Yum!

Baked Brie in Phyllo with Mango Chutney

I modified this to make small bit size rolls for a wedding dinner and these were the ONLY thing that was completely devoured. Not a single leftover! I sliced a round brie into wedges, and topped each one with a small amount of mango chuntney. I used butter instead of olive oil, and about a half sheet of phyllo per roll. Roll up the cheese and chutney in the phyllo and seal with butter. Bake until golden in the oven. Heaven! Thanks for a great idea, it was a big hit!

White Chocolate Raspberry Cheesecake

I read the reviews and took some tips and this cheesecake came out perfect! Here's what I did that was not in the original recipe: 1. Used half the amount of sugar listed. 2. Used 300g of quality white chocolate melted with the cream instead of chocolate chips 3. Water bath (sort of). I put a deep cookie sheet filled with water on the next level below my cake pan. 4. For the crust, as I cannot get oreo cookie crumbs I used arrowroot biscuits with 2tbsp cocoa added, same amount of butter and sugar. The trick with making the raspberry sauce swirls is to not use too much sauce in one spot, otherwise it sinks into the cake. So drip it on over the entire surface and not just in one area. I greased the sides of the pan and baked the cake for 55 min and let it rest in the oven for 7 hours, then put it into the fridge. It pulled perfectly away from the sides and no cracks on the top! Served 10 with generous portions. Great recipe, its going to be our new "fancy cake" around here :)

Cindy's Pumpkin Pie

I followed the directions SO carefully, but the ice cream separated out to form a white layer on the bottom, while the pumpkin layer on top was very eggy and "bubbly". Not the thick creamy pie i was hoping for.

Au Gratin Potatoes II

Oh wow! This is the best recipie for potatoes i have ever used. I substituted cream of mushroom soup for the celery because i couldnt find it and it was so good! I got so many compliments and the dish pretty much licked clean! You HAVE to try this!
