Double Decker Tacos

There are many ways to improve this taco recipe. As a Mexican, I almost cringed looking at this recipe. It's really not that hard to make it the right way but a lot of people assume it is. First off, don't buy canned beans, that's just full of preservatives, salt and processed chemicals. To make refried beans just mash cooked (boiled beans) with a little oil for flavor along with salt. For the meat, don't add seasoning, just sautee garlic, onion, tomato and then add meat to pan to cook and then add each spice as you like. Guacamole does not have sour cream and it includes avocado, tomato, onion, cilantro, lime, lime zest, jalapeno salt and pepper. Also, tortillas for tacos should really be corn tortillas for the authentic Mexican taste. If you want hard shell tacos simply place meat in the tortilla and fry over a pan on each side until crispy. You can also make taquitos this way by wrapping tortilla like a flute and securing with a toothpick while frying. Finally, please use queso fresco, a moist crumbly Mexican cheese, you wont be sorry. Hope this helpas and motivates people to make homemade tacos the way a Mexican family would. =)

Ladyfingers

I loved this recipe! I everything worked out perfectly. I made this recipe into 8 inch round pans and it came out great. I made tiramisu with it and it was perfect. You could even use this for a tres leches recipe. The only recomendation I have is that you add vanilla or another type of extract to this recipe to avoid the eggy smell and/or taste. However, since I turned these lady fingers into tiramisu, the egginess was hidden.

Pumpkin Brownies

This recipe was interesting more than anything. I got good feedback especially on those who arent chocolate lovers. It kinda tastes like the mexican "abuelita" hot chocolate. Overall very good flavor! I just thought the texture was a bit off but thats just the pumpkins fault.

Tiramisu Layer Cake

Amazing tiramisu recipe! Although I didn't follow the recipe, I used it as a guide. I did not use white cake mix and instead I made lady finger cake. I didn't have mascapone cheese so I used cottage cheese and mexican sour cream in a blender. I also used vodka instead of some coffee liqueur. I added pecans in the filling and topping for texture. I soaked my sponge cake with coffee such as I would for tres leches cake only not as much. And, I also added mexican vanilla to filling topping and cake.

Pastry Cream

Very easy to make and very good! I like the fact it doesn't require so many egg yolks like a regular custard would. Tastes just like creme brulee! I used it as a filling for two cakes I sold and customers loved it =) thank you!

Chantal's New York Cheesecake

I have the biggest sweet tooth ever and cheesecake is my #1 dessert. This recipe is GOOD! I have amde many cheesecakes, looking for that NEW YORK taste and texture. This recipe is definitely perfect. However, since I am a baker myself I always have to add my touch. I added two tablespoons of Mexican vanilla and I also substituted 1/2 cup of condensed milk for sugar. Next time i will try adding ricotta cheese since I love the texture of it.

Cottage Cheese Pancakes

I love the idea of using cottage cheese for most recipes...However, when I saw cottage cheese pancakes I got so excited because I have the biggest sweet tooth but I like to eat healthy. I love the fact that this pancake is a nutritious healthy pancake. I used whole wheat flour, lowfat cottage cheese and applesauce instead of oil. I was able to eat pancakes without scruples! I loved the softer creamy texture although I wish they would have come out fluffier because mine were on the flatter side. Even still, I love the fact that this pancake packs fiber, protein, calcium and vitamin D!

Holiday Left-Over Sweet Potato Cake

My goodness these were perfect! I was skeptical about the beer that my husband happened to be drinking when I was making it, but oh my we're they delicoous! I'm sure any milk in place of beer would do just as well though.

Spinach Tomato Tortellini

This recipe was really simple and delicious! I made this for my fiancee and mother in law and they absolutely loved it! I added probably 4-5 cups of spinach, a whole bag! and I added a whole fresh chopped tomato and 3 garlic cloves as well. I added mushrooms and a itty bit of chicken bouillon. I didnt use any heavy cream, instead I use milk and added cornstarch. ooh and..I added some spice of course, cayene pepper and crushed red pepper.

Mushroom Risotto

I made this risotto for my fiance and mother in law and they absolutely loved it! I used brown rice since I tend to be on the healthier side. I also used chicken stock instead of vegetable stock for more flavor. I did not use heavy cream because I didn't have any and I used portobello mushrooms and asparragus (combined at the end, cooked separately.)

Salmon with Brown Sugar Glaze

for some reason the glaze kind of dried up and got sticky in the over...I was expecting more of a barbecue glaze kind of texture but it got so viscous that i didnt enjoy it. My boyfriend loved it. I will try baking it a at a lower temperature.

Pineapple Banana Bread

Good banana bread with a soft texture. I made a few substitutions because i wanted it to hav more nutrition and flavor: I used 1/2 cup wheat flour, 1/2 cup rolled oats 1/2 cup bran flour (or cereal) and 1/2 cup all purpose flour. I also used brown sugar instead of white sugar for flavor and I used Mexican Vanilla as it is much more flavorfull and I used 1 whole tablespoon of Saigon Cinnamon, also more flavorful. I put the wet ingredients in the blender so the texture would be smoother. Finally I used 1/3 of the oil called for but just make sure you don't overbake it iif you do this to preserve moistness. Oh and I added walnuts. My mom loved it and she's a tough critic!

Italian Creme Layer Cake

This cake for some reason is a bit time consuming. However it is very delicious! I did not add coconut because the bday girl did not like it but I'm glad I didn;t because with the nuts alone, it was too much! Althoug we're nut lovers we all agreed the nuts took the show away from the cake itself that we could barely feel the cake texture. Next time i'll add halff the nuts and half the coconut...maybe even less. The texture of the cake was more on the muffin side but it was still good.

Special Buttercream Frosting

I loved the texture of this frosting because it is great for decorating and it holds well in warm temperatures. However, the only thing that makes me not so crazy about this recipe is that is really has no flavor. Buttercream you need butter flavor so maybe adding a litttle butter extract would help. You can substitute half butter for the shortening but be aware that it will melt a lot faster.

Grilled Soy-Sesame Asparagus

Nice idea as an alternative to the traditional garlic butter recipes. I used three bunches of pencil asparagus and did not even measure the ingredients, I usually eyeball ingredients on savory dishes. I also did not read the instructions like another reviewer and added all ingredients except the sesame seeds before grilling. Oh yeah, I also the asparagus and added sesame oil and seeds at the end. Great flavor! My boyfriend loved it!

Strawberry Coffee Cake

This was a really easy cake to make which was great! The base is great Only Im Not Sure if I cooked it correctly because I feel the fruit left the bread a little mushy or undercooked because of the moisture. I added mexican cinnamon and vanilla to my batter and streusel. I also added peaches to strawberries. Overall very good I will try again. :)

Honey Lime Chicken Wings

My chicken wings came out horrible but that was my fault. I baked them and tried to get them crispy but instead the chicken just ended up coming out like rubber, so be careful if you do bake. However, the sauce was delicious! I added soy sauce to it and a little bit of ground pepper flakes to wake up the sauce. Will use this sauce recipe again =)

Romantic Chicken with Artichokes and Mushrooms
