Chicken Pot Pie IX

Followed a few of the suggestions here: Added two small russet potatoes (peeled and cubed) Added a can of cream of chicken soup to the cream mixture Pre-cooked the bottom pie shell for about 8 minutes Reduced temp. to 375, cook time was 40 minute. Used garlic powder instead of celery seed and added poultry seasoning to the boiling mixture So, basically a different recipe. Nonetheless, it was delicious!

Zucchini-Chocolate Chip Muffins

Wow! Super yummy! Used whole wheat flour instead of regular and added a banana because I was a little short on zucchini. Otherwise, exactly per the recipe and these are sooooo delish. I picked the wrong day to start back on Weight Watchers, lol! Next I'll try subbing apple sauce for some or all of the oil.

Brunch Strata

Made this, with just a few substitutions based on personal preference. Fantastic! The best thing about this recipe is the potential for experimentation. Looking forward to trying it out with a variety of different veggies, cheeses and breads. I don't have an 11x7 pan (much less 2!) so I halved the recipe and used a casserole dish and increased the cook time to about 1 hour 10 minutes. Not recommended, but you work with what you've got. Even with increasing the cook time, it did not burn and smelled wonderful the whole time. Prepared this completely in the casserole the night before and cooked it the next morning. It wasn't soggy and it stayed mixed up. This has become a favorite. I can't wait to have an occasion to share it!

Mexican Style Cornbread

This was a big hit at two different chili dinners (so far)! I use less jalapeno, less onion and a Mexican blend of cheeses instead of just cheddar, but everything else is the same. Nice and moist, very tasty and easy to make!

Grandmother's Buttermilk Cornbread

OMG--this is like cake! Love that it is so easy to make (less dishes to wash!!) and comes out so moist and delicious! This is my go to recipe for basic cornbread-no tweaking needed!

Pineapple Upside-Down Cake V

This turned out great, exactly like the recipe (except I left out the coconut). Added whipped cream for decoration around the bottom, middle and top and viola!

Double Layer Chocolate Peanut Butter Pie

Homestyle Turkey, the Michigander Way

I have made this recipe for Thanksgiving for two years and it has received rave reviews. Its very simple but quite flavorful. Instead of bullion, I used 1 can of broth plus 1 can of water. This recipe also produces really good gravy stock.

American Lasagna

A friend and I made two deep dish versions of this for a party and it went over great. We didn't pre-cook the noodles ahead of time and it still came out just fine. The brown sugar in the sauce really gives it a homestyle taste. Refrigerated it for two days before serving it at the party and it performed perfectly!
