Buckeyes I
This worked out great. The mixture started to look crumbly at 4 cups of sugar, so I stopped there. If you want help with the chocolate, I usually add 1 tbs for every cup of chips. This helps thin the chocolate a little and also helps it melt so you can get a better and easier coating. I also recommend using a crockpot instead of a double boiler, if you can. It's an easier process and you are less likely to burn yourself. For the reviewer who ended up with a sticky mixture, you may have melted your butter. It's important that you only soften it. Melted butter means the mixture will be runnier and therefor sticky. To fix this, try freezing the mixture for 30 mins. If that fails, add more sugar to thicken the mixture.

Chocolate Chip Meringue
Warning! These cookies expand to nearly twice their size when you bake them. I didn't know that and they came out huge! I was looking for a recipe where you wouldn't leave the meringues over night or for several hours but also wouldn't turn the cookies brown. This worked out great!

Tortellini Soup I
Fantastic soup and very open to experimentation. I used turkey sausage and wasn't worried about grease so I just dumped the onions and garlic in with it. No straining at all. I also didn't skin the sausage, just chopped it up finely. A lot less work that way. I used canned carrots, so I didn't do the first 30mins of simmering, just dumped all the ingredients into the pot and simmered for 45mins. I didn't have tortellini, so I used a bag of cheese ravioli. I cut up regular tomatoes instead of stewed. I only had 2Tbs of parsley left. If I made it again, I think I would still only use 2Tbs. I'm worried the parsley might be overpowering with 3. The whole soup turned out fantastic. The broth is delicious.
