Pesto Sauce

This was quick and easy to make. I subbed walnuts for the pine nuts and a 1/2 cup of chicken broth for a 1/2 cup of the oil (less fat!). I would recommend this to anyone.

Amazing Whole Wheat Pizza Crust

I was not pleased with this crust. I followed the recipe to the letter except I substituted a teaspoon of Stevia for the sugar. :(

Yummy Sweet Potato Casserole

This was the first time I had ever made sweet potato casserole, and I was very pleased. I followed the recipe exactly as stated. The next day I had another sweet potato casserole with coconut on top, and I really liked it; I think next time I make this I'll add some coconut on top and experiment with some healthier ingredients.

Fluffy Whole Wheat Biscuits

These weren't bad with blackberry jam, but I really wasn't too impressed with them by themselves. I used skim milk and oil instead of the butter, so that may have had something to do with it.

Olive and Feta Pasta

Eggplant Parmesan II

This was great! I made a few healthy changes...using egg whites, low fat mozz cheese, and substituting half of the bread crumbs for wheat germ. I also cooked the eggplant longer (8 minutes each side). I haven't been a huge fan of eggplant parm...until now!

Cherry Chicken Lettuce Wraps

This doesn't taste like PF Chang's chicken lettuce wraps, but it is good. I also added water chestnuts, used cherry flavored craisins instead of sweet cherries, and added a teaspoon of sugar to the recipe.

Grilled Chicken Panini

Awesome! I didn't have Provolone, so I used feta cheese instead. I also put the sammie on the panini press instead of in the frying pan. It was delicious! This will be one of my favorites for sure.

Pesto Pizza

This was great. We used a ton of the vegetables; it was almost comical how high the toppings were on the pizza. We had to cook it a little longer than it said, but that's not a big deal. It was also pretty filling due to all the veggies...A nice guilt free pizza!

Sausage and Egg Casserole

Cheap and super easy to make; it was a hit at our staff breakfast. Next time I'm going to use egg whites, turkey sausage, and fat free cheese to see if I can cut a lot of the fat/calories out.

Seared Sea Scallops

This was very easy to make and quite tasty. I didn't have any lemon juice, and I added a few squirts of spray butter to the scallops before I rolled them in the flour. My only complaint is that they were a little 'watery'. I put them on a paper towel to soak up the water and it helped a lot. I'll definitely make them again.

Banana Bread - Quick Bread for Machines

I wasn't happy with this banana bread. I thought the consistency was off and it tasted dry. I did substitute apple sauce for the oil, so that might have affected it.
