Sophie's Zucchini Bread

This was pretty good. I don't have bread pans so I used a glass dish and the cook time increased to about an hour and a half, though the outsides didn't burn at all.

Chicken Tagine with Couscous

This was easy to prepare and quite deicious. I will consider adding potatoes or another vegetable next time to give it more substance. Overall we were all quite pleased with it!

Chicken Tikka Masala

Would have been delicious but was barely edible because of the salt! Will persevere and use less than half recommended next time. This is my absolute favorite Indian dish so I will definitely try again. Added onions and peppers and that gave it a bit more substance.

Cinnamon Bran Muffins

These came out really good with a few changes. I only used 2 cups of butter cream since everyone said it was runny, I used applesauce and olive oil instead of butter, and we added some frozen mixed berries for flavor. It made about 20 good sized muffins. Will make again! :)

Chicken Enchiladas

This was absolutely amazing! I made a couple changes. I cooked the chicken with the soup and enchilada sauce with a half cup of water in the crock pot. I pulled the chicken out, shredded it, and added the sour cream and a third of the broth in the crock pot. I poured another third of what was left over the enchiladas before putting the cheese on top.

Samosas

This is a delicious recipe! Instead of using ground lamb, I used a small can of peas and carrots as well as one and a half boiled and chopped russet potatoes. I left out the green Chile,s,, used mustard powder instead of turmeric, and cut the salt in half. My only issue was that the recipe made more filling than dough, so I would double that next time. But I'll definitely make this again!
