Grandma to 6 granddaughters who live in NJ, IL, and FL so we get to travel a lot. Learning to cook for just two people who usually stop hobbies when hungry and need to fix something quick, healthy and easy.
My favorite things to cook
Love cooking Italian and Chinese. Learned Italian growing up and went to 3 years of weekly Chinese cookling lessons. (Sometimes hard to find Chinese cooking ingredients in rural Virginia)
My favorite family cooking traditions
My Mom always made Roast Turkey with chestnut stuffing for Thanksgiving and Baked Ham for Christmas. I've carried on the tradition and so have my son and two daughters with slight variations.
My cooking triumphs
Every year after the Memorial Day Parade fellow members of the rescue squad would come to our house for picnic and opening the pool. My Tuna Macaroni Salad, Cole Slaw with Raisins and Beer Batter Onion Rings were always requested and the hit of the day.
My cooking tragedies
Our first Thanksgiving. Both families were invited. Having never cooked a turkey before we sought lots of advice. Suffice it to say dinner was a disaster. Paper bag in oven caught fire, broke a window trying to let the smoke out, turkey was still frozen, veggies burned but the baked yams were good.

Mama's Best Broiled Tomato Sandwich
Great sandwich. Second time I marinated the tomatoes in Italian Dressing, mixed mayo with Italian Seasonings and used shredded mozzarella. It came out great

Individual Baked Eggs
I made the Baked Eggs with a slight variation-two eggs in each cup. Used a slightly larger rameken. It took a little longer but came out pretty good. Eggs were well cooked and we like a slightly runny yolk. I'll cook a little less next time but, will try the recipe again.
