Fettuccine with Sweet Pepper-Cayenne Sauce

Reviewed: Mar. 30, 2012
This was so easy to make! I reduced the cayenne per other comments, and it had just the right amount of kick!

Baked Parmesan Tilapia

Reviewed: Sep. 30, 2012
This is the most flavorful tilapia recipe I've ever made or tasted! Normally I follow the original recipe first, to see how the author intended the flavors. This time, while reading through reviews, I substituted olive oil for the cooking spray, and added 1/4 tsp of Creole seasoning as others suggested. It was FANTASTIC!

Followed recipe exactly and it was so flavorful & easy! Served with French bread rolls on a chilly fall evening. Easily served four big appetites!

Roasted Cauliflower Soup

Reviewed: Jan. 25, 2013
This was a fantastic recipe! I didn't have 'roasted garlic-flavor' olive oil, but I did have some truffle olive oil and it was wonderful. I used a half cup of milk and added a half cup of cream (because I like the cream based soups), and I just stuck the immersion blender in the whole pot to blend some of the largest cauliflower pieces. The result was more of a 'chunky' soup, but we loved it. I'll definitely keep this recipe around for times in the future when I have leftover cauliflower!

Frank's Favorite Slow-Cooker Thai Chicken

Reviewed: Jan. 30, 2013
The flavors in this recipe were fantastic, but I devoted almost the whole day to this crock recipe, but the cook time was too long. I followed the directions for cooking time (8 hours), and setting (low), but the chicken thighs were so over-cooked that they were virtually paste, and the sauce was thin and oily. I'll try this again because I must have done something wrong, but I will definitely cook the dish for less time - probably 5-6 hours on low, to see if that helps the consistency. The flavors were really amazing, and I served it over jasmine rice with some soy and maple-marinated baked tofu bites. So I will come back and adjust my rating if I can get the sauce and cook times adjusted.

Baked Tofu Bites

Reviewed: Jan. 31, 2013
I followed the steps exactly, with the exception of adding the liquid smoke. My tofu bites didn't look as dark as the picture, and they weren't as flavorful (I guess the liquid smoke may contribute to color as well as flavor? Will try again after purchasing some liquid smoke. I planned to add them to a salad, served with Frank's Thai Chicken (a slow cooker recipe I found on allrecipes.com), but in the end, I added them to the chicken and rice on each plate, and they were good!

Cowgirl Beef Stroganoff

Reviewed: May 22, 2013
I really love slow cooker recipes, but I don't think Beef Stroganoff is a dish that is served well by this cooking method. The favor was flat, and, while I appreciated the addition of fresh mushrooms, since the mushrooms didn't cook with other ingredients, the imparted none of the flavor. I didn't care at all for the cream cheese in this dish. The point was, I'm sure, was to re-create the consistency, but it left the exact wrong flavor that you get from a good rue. I have tried a couple other slow-cooker recipes for stroganoff (found here at allrecipes), and would recommend one of them if you absolutely can't afford the time.

Rich and Creamy Beef Stroganoff

Reviewed: May 29, 2013
This was FANTASTIC! I followed the advice from someone else and saved the beef drippings. I then added enough beef stock to bring it up to the 1 1/3 cup mark. I read the reviews about decreasing the red pepper, but followed the recipe and didn't find the dish to be overly spicy. This is a keeper! It ALWAYS takes me way more time to prep than others apparently, but still, it was worth every minute of the time I spent in the kitchen! I did almost forget to purchase the noodles for this dish, so it would be great to see that added to the ingredients list.
