My cooking triumphs
My first cooking triumph was when I baked Julia Child's Fish En Croute. I was 17 and had so much fun. I grew up near Seattle and ate at a delicious restaurant no longer in business, called Crepe de Paris. Wow, the cook was excellent and made the most delicious, authentic crepes and onion soup. I have tried to duplicate it, but, alas, I can't quite do it! I am 48 now, and still enjoy new dishes, but with a large and busy family, I appreciate dishes that are high on nutrition but not so time consuming. I am not afraid to try ethnic dishes, but enjoy traditional American standbys. In fact, I love a good hamburger most anytime.
My cooking tragedies
I have paid the price for multi-tasking while cooking too many times -- resulting in burnt food ending in the trash can. :(

Rita's Spinach Casserole
Very good! I added a 15 oz can of chopped tomatoes with green chilies to the tomatoe sauce to give it more flavor, and used a one pound box of rotini pasta because that is what I had. My children even liked this -- what a great way to incorporate spinach into their diet. :-)

Easy Pumpkin Muffins
There is something about the texture of these muffins that I don't care for. I don't know how to describe it other than to say they have a somewhat slimy mouthfeel. Adding 2 eggs and 1/3 cup oil helps the texture problem. This increases the batter to make about 18 muffins rather than 12. The ease of preparation still makes this a good recipe for busy days.
