Mom's Zucchini Bread

WOW..amazing. This is the one for me. To cut out on fat, I didn't throw the nuts in. I substitued 1 cup of whole wheat flour, and I went with 1 cup brown..and 1 cup white sugar. I also went 3 cups of shredded zuchinni...that is a must with this recipe. Next time I'll try reducing the oil..substituting apple sauce for 1/2 cup.....I hope this won't comprimise the integrety of this recipe. I made muffins for portion control.

Banana Cake VI

Indian Chicken Curry II

OH my this was great!! My spouse who isn't used to eating spicy flavourfull East Indian food, loved it. We had the left overs for diner the next night and I swear it was even better. This will be a regular dish in my cooking repetoire.

Easy Butternut Squash Ravioli

Very good recipe. Will be having this again. The only thing I changed is that I used Phillydelphia Cream Cheese, and wonton wraps, as our grocery store didn't carry the ones listed here.

Cinnamon Rolls II

Very easy to make, everyone loved them. For some reason, mine weren't rising well, so I left them overnight on the kitchen counter and they were perfect in the morning and ready to bake. This is the only recipe I have ever tried, and I don't feel I will need another :)

Aunt Norma's Rhubarb Muffins

These were easy to make, I only had frozen rhubarb on hand and it worked out perfectly. They are moist, the topping is just perfect for the tartness of the rhubarb...the flavours of the batter, rhubarb and topping realy balance and compliment each other. I would make these again.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Amazingly decadent!! I made this cake twice...the first time, I made the mistake of increasing the heat in my oven to 375c because I read a few reviews and they said it took a lot longer to cook...well, sorry but that didn't work for me. It was a bit dry and I felt it over cooked a bit but it was very good tasting. So, the second time, I used dried garbanzo, which I soaked for a day and half, then I cooked them in boiling water for a couple hours until I felt they were soft enough. I used maple syrup instead of sugar, and I used dark chocolate chips instead of semi-sweet. I doubled the baking powder and that's it. Baked it in a spring-form pan for exactly 37 minutes (because my pan was a bit wider) at 350c this time. Well let me tell you...this cake is unbelievable!! No one could ever guess it's made with chickpeas...I swear it tastes even better than any other chocolate cake you could make and there's no butter no oil no milk...way less calorie-dense and nutritious. LOVE LOVE LOVE this recipe. It's a keeper!

Baked Falafel

I agree with another tester here...I doubled the spices as well, and I suggest you do if you've had this kind of ethnic food and are used to the stronger spice flavours, which makes this recipe wonderful. I used whole grain flour..it made me feel better!! I made smaller patties, fried them up in a frying pan as instructed and finished them in the oven for the required 10 minutes...this helps alot with expelling more moisture. I paired this with Chef John's Tzatziki sauce and soft warmed up pita bread....OMG, it's a staple now at our house.

Strawberry Shortcake

After readingbthe reviews, I also went ahead and added a bit more shortenning, I did keep with the 4 tsp on baking powder and it was perfect, our baking powder "Magic Powder" doesn't contain aliminum. I had in my freezer frozen sliced strawberries, so I used them. This recipe is realy good, it's not too sweet, and just perfect for a nice summertime dessert. I will make this again.

Jalapeno Scorpion Pigs

Oh Yeah...if you want to impress...this is the app to bring when invited to a party. I used the biggest jalepenos and it made the job easier..but I also used large shrimp. I used maple flavoured bacon. I needed toothpicks to secure them. They were very tasty and everybody loved them....they didn't last verry long so make lots!!!Thank you for this recipe!!

I have made this recipe 3 different times, using sometimes a variation of different nuts, and I've added either lemon or orange juice/rind in the hot syrup...and I've never missed. Everyone loves it, and honestly a lot easier to make than I had expected.

Zucchini Chocolate Orange Cake

This cake is so moist and the flavours from the chocolate, orange zest, mingling with the shredded zuchini...hint of cinnamon..wow!! I gave some to my brother and his girlfriend, my parents took 1/2 the cake and shared it with my uncles, and I had 1/4 of the cake with my boyfriend...everyone talked about it the next day!! So if you have a big zuchinni and don't know what to do with it, that someone gave you (my mother!)...do this cake! Oh and the little glaze that you pour over while it's still a little warm...reminded me of the simple glazing on a doughnut. It was wonderful...will do this one again.
