Zucchini Pie III

I made this just for kicks...but it sure fooled the kids!! They all thought it was apple pie. Was fun to make...I would ommit the tapioka though, and go half with the cinamon.

Healthy Banana Cookies

These were realy good and soooooo easy to make. The only reason I didn't give them a 5 star rating, is that I think they could use an extra ingredient to realy enhance the flavours....such as cherry or almond essence. I'll try adding it next time.

Easy Butternut Squash Ravioli

Very good recipe. Will be having this again. The only thing I changed is that I used Phillydelphia Cream Cheese, and wonton wraps, as our grocery store didn't carry the ones listed here.

Jeera (Cumin) Rice

Absolutely what I was looking for!! I was so excited when I took the first bite. I added turmeric to the rice water while it cooked, so it gave it a nice yellow colouring :) Thank you!!

Indian Chicken Curry II

OH my this was great!! My spouse who isn't used to eating spicy flavourfull East Indian food, loved it. We had the left overs for diner the next night and I swear it was even better. This will be a regular dish in my cooking repetoire.

Mom's Favorite Baked Mac and Cheese

This turned out to be very creamy....very good. I didn't have American processed cheese, so I used Canadian processed cheese. I also added a bit of parmesan cheese in the sauce and everyone loved it.

Mom's Zucchini Bread

WOW..amazing. This is the one for me. To cut out on fat, I didn't throw the nuts in. I substitued 1 cup of whole wheat flour, and I went with 1 cup brown..and 1 cup white sugar. I also went 3 cups of shredded zuchinni...that is a must with this recipe. Next time I'll try reducing the oil..substituting apple sauce for 1/2 cup.....I hope this won't comprimise the integrety of this recipe. I made muffins for portion control.

Turkey and Quinoa Meatloaf

I realy liked it...the texture was great, and it just is a healthier variation to the classic ground beef meatloaf. When it was almost done, on day 2, I sliced it up and made a sandwich!! One thing I realized I didn't have when I was preparing it was the tomato paste, so I used ketchup...the tabasco in this recipe realy gives this a balanced taste. Ground turkey on it's own can be bland in comparison to ground beef, so the tabasco and worcestershire is a must in this recipe. I scaled down the hot sauce abit...I was scared it would be too spicy. I also added about 2/3 cup of homemade bread crumbs. Overall, this is nice, low in fat, lots of flavour, and I'll be making it often!!

Jalapeno Scorpion Pigs

Oh Yeah...if you want to impress...this is the app to bring when invited to a party. I used the biggest jalepenos and it made the job easier..but I also used large shrimp. I used maple flavoured bacon. I needed toothpicks to secure them. They were very tasty and everybody loved them....they didn't last verry long so make lots!!!Thank you for this recipe!!

Parmesan Chicken I

This is so good.....I can't get enough. It's almost like a risotto, super creamy and the flavour of the fresh grated parmesan is incredible. I didn't put all the butter they ask for, it's not needed in my opinion. I've made it twice now....and it's going to be a keeper!!

Cilantro Lime Cod

I find the lime/lemon on top made the fish taste bitter...that's the only thing I would change. Other than that...it was still a pretty decent recipe.

I think the only mistake I did was that I used the side of the grator with the smaller holes...I will use the next size up next time. The flavour was awesome. I just didn't like the texture..but that's my fault.

Brussels Sprouts with Grapes

This was good, but a little heavy on the fat side. The garlic is the predominant flavour here, along with the butter. The grapes realy balance this vegetable dish. I thought it was so odd, I had to try it. I served it at our Thanksgiving dinner, and had surprised reviews on it...from Wow, gapes and brussel Sprouts..to...I don' like brussel sprouts, but this is interesting. It was a fun dish to serve. I bet it wd taste even better with a little lemon juice. I would do it again...but I would like to experiment with another recipe for brussel sprouts until I find the perfet combination of spices for these little baby cabbages!!

Next-Best-Thing-To-Robert-Redford Pie

This is so good! I made for the first time, after having it made for me by my mother-in-law for years ago. I wasn't sure about the reviews on doubling the recipe as some reviews said they would double up....so I did, but I went 1 and half (not double)..anyway, if you go that route just make sure your pan is deep enough to accomodate the volume. My brother LOVED it, and I am serving the rest tonight after our Thanksgiving dinner. OK....the dinner is over, but the guests have come back today for another piece of this dessert!! THEY ALL LOVED IT!! Will make again often..this is a must now for allmy big dinners.

Rhubarb Peach Cobbler

Another geat success....this is sooo good with ice-cream. I followed the recipe except, I didn't have canned peaches, so I used 5 fresh riped peaches and I made a light syrup (sugar/water/cinnamon/cornstarch) as they say in the recipe...just made a little more...and it was amazing!! I didn't have plain yogurt, so I used flavoured and it was still awesome! I doubled the recipe...I'm glad I did! This is not too sweet it's realy nice with a cup of coffee in themorning too.
