Best Ever Jalapeno Poppers

These were fabulous! The actual preparation wasn't as bad as I thought it would be; I just lined everything up on my kitchen table - kind of like an assembly line! I used 20 jalapenos of all different sizes and there was JUST the right amount of filling for all of them. I didn't skimp on the filling either; they were all pretty packed! Once the peppers were breaded, I put them in the freezer until "showtime". They looked awesome uncooked! The poppers fried up nicely and were definitely yummy! Next time, I am going to use more bacon. I had frozen leftovers that didn't make it to the fryer, so they went back into the freezer. The next day, I didn't want to turn the fryer on again, so I just popped them in the oven for about 14-15 minutes at 425. They weren't quite as good as the fried version, but they were still tasty!

Slow Cooker Chicken Stroganoff

Maybe I toyed with this recipe too much? Maybe my expectations of stroganoff don't include chicken? Whatever it is, I just wasn't all crazy about the outcome of this recipe. I took suggestions/tweaks/tips from many other people's reviews - perhaps I just did too much. However, it STILL seemed to be lacking SOMETHING. I don't think I will be making this again. If I do, I will stick to the original recipe.

The Best Lemon Bars

WONDERFUL! This is now my go-to recipe for lemon bars. I did a little tweaking to the recipe per other users' reviews. The outcome was awesome. Very rich and tart with a buttery crust. I received positive feedback from all who tried them!

Crescent Bacon-Cheddar Pinwheels

To me personally, these were just so-so. However, many people at the event for which these were prepared raved about them! I guess I was expecting more flavor. They looked nice and were easy enough to make. I added a tad bit more cheese and bacon. Definitely stick the rolls in the freezer a bit before attempting to cut them. I will make them again, but will either use more ranch or cream cheese instead of the ranch. I need to figure out something to give these a little more of a "kick". Perhaps I will come up with a dipping sauce of some sort for these.

Slow Cooker Beef Stew IV

Best beef stew I have ever had/made! It was snowing and VERY cold in Kansas City this weekend, so this was the perfect thing to make! I changed a few things, which only made this recipe sooooo much better. I used almost 4 lbs of meat, which I marinated in red wine and garlic overnight. In the morning, I threw it all together. I used beef broth instead of water and I sauteed a whole bunch of mushrooms with my onions. I did not have the need to deglaze the skillet. Once everything was in the crock pot, I added an entire can of tomato paste. After the 6 or so hours, I added frozen peas and two envelopes of dry brown gravy mix. It could NOT have been more perfect! This is now THE recipe for beef stew; I will be making this again and again.

Pasta with Asparagus

I made this as a side dish for grilled mesquite chicken breasts and it paired perfectly. I used TWO tbsp of olive oil, added 2 minced garlic cloves and used an entire can of chicken broth. I let the asparagus, mushrooms, garlic and pepper flakes simmer for a while and added a little bit of onion salt. I added two good-sized tbsp of Country Crock to the pasta before mixing with vegetables. Once mixed, the pasta absorbed almost all of the broth and left the perfect amount of "sauce". I always have a way of taking a healthier recipe and making it not-so-healthy. At any rate, it was fairly light and quite delicious. I will make it again.

Easy Sausage Gravy and Biscuits

This was my first gravy-making attempt and it couldn't have gone any better! All I have to say is: WOW. I used a whole roll of sausage and threw in a healthy-sized glob of butter before flouring. This is now my go-to recipe for gravy! No more envelope mixes for us!

Cabbage, Potato and Baked Bean Soup

I doctored this up a bit and enjoyed it very much. I added carrots and bell pepper to the other veggies. At the end, I added a can of tomato paste, so it turned out to be a tomato-vegetable soup. I almost added ground turkey, but didn't. I also thought about adding chunks of ham. I think either would have made it even better. I will definitely make again.

Buffalo Chicken and Ranch Wraps

Fast, fresh and delicious! I sauteed some onions and garlic and took my already cooked chicken (leftovers that had been in the freezer) and stuck in the same pan to warm it up. I used a little more buffalo sauce than called for in the recipe. I used green spinach and herb tortillas. The combination of tomatoes, shredded lettuce, shredded cheddar cheese and ranch really worked well with the meat mixture! Next time I will be adding chopped avocado. They looked beautiful and tasted WONDERFUL!

Cola Pot Roast II

This was very good - definitely tasty, but I wouldn't say the best I have ever had. I cooked everything in crock pot on low for about 10 hours while I was at work. I used baby portabellas and a whole onion in addition to the carrots (which I used about 3/4 bag of baby carrots) and celery. I was a little concerned about lack of liquid, so once everything was in the crock pot, I threw a little splash of water in there. There was lots of "juice" to work with in the end and it was quite flavorful. I added another envelope of brown gravy mix, as I like my gravies super rich and, yes, a little salty. Even so, everyone thought the gravy and veggies were perfect, despite the addition of more gravy mix. I would make this again the same way, but will probably add some peas at the end of cooking.

Smothered Green Beans II

I really enjoyed this recipe, although I did make changes after reading several reviews: used 1 large onion, 1 cup of chicken broth instead of water, 3 tbsp brown sugar and 1/4 cup Worcestershire sauce. I simmered on low for 30 minutes and they turned out just how I like them: not crunchy and not mushy. Delicious! This will now be a regular dinner side dish.

Jen's Heavenly Egg Salad

Heavenly it is indeed! I had been craving egg salad for a long time and what's a better way to use up all of those Easter eggs??? I didn't have Dijon mustard or a lemon on hand. I substituted spicy brown mustard for the Dijon and 1.5 T of lemon juice for the fresh lemon. I was a little worried about the spicy brown mustard, but all turned out just fine. It was fantastic!! I served on toasted wheat bread with lettuce and had kettle chips and fresh fruit on the side. Next time I will be doubling or tripling the recipe! MMMM MMMM MMMM

Orzo with Parmesan and Basil

Fabulous. I added sauteed mushrooms and spinach. I added extra chicken broth as needed. No fresh basil on hand, so I used dry leaves. Also, I thought I had orzo on hand, but didn't; I had arborio rice. Even though I didn't follow the recipe hardly at all, the result was still awesome. I will definitely be making this again as written - no add-ins - with all of the right ingredients.

Molly's Chicken

What an interesting, tasty flavor! To me, it was a cross between mole and barbecue. I swapped the tomato sauce for tomato paste, since I had no sauce on hand. It made the sauce way too thick in the end, so I will make sure I have tomato sauce on hand next time. I added a dash of Worcestershire sauce. Like I said, it was a great flavor and definitely something I will be making again. So easy! After dinner, I took the remaining legs and stripped them of the meat. I put the meat in a container, scooped out all of the extra sauce from the crock pot and mixed it in with the chicken and shredded it real good. I served it on egg rolls today and it was equally as delicious!

Broccoli and Cheese Brunch Casserole

I made this for my dad on father's day yesterday. Everyone seemed to enjoy this, including myself! It was very simple to prepare; I prepared it the night before, refrigerated it overnight and popped it into the oven the next morning. I followed the recipe as written, except for that I sprinkled green onion on the top over the tomatoes. The next time I make this, I will be adding sauteed onions and mushrooms to the broccoli/sausage mixture, as well as a little more sausage. I would like more tomatoes on the top, so either I will add more slices or dice a few romas and put them on there instead. Thanks for this great recipe!

Chicken with Tomatillos and Poblanos

This was good and even better the next day. The only thing I did different from the recipe was adding a can of corn and a serrano pepper. Also, I used both red and yellow bell pepper. I served with chicken-flavored rice and refried beans. The next day, we ate all three wrapped up in fresh, flour tortillas.

Savory Chicken Breasts

BOOM! This was toooooo good! I seasoned the breasts first with onion and garlic powder, as well as poultry seasoning. I used fresh, smoked swiss from the deli and used a little over an ounce (about a slice and a half) per breast. I used a 1/2 cup of evaporated milk with 1 can of cream of chicken and 1 can of cream of mushroom. I like a lot of "gravy" and this was plenty! For the topping, I used one whole box of stuffing. Now, the stuffing wasn't as "done" as I had expected it to be, but I didn't care that it was a little mushy. The flavor of this dish was outstanding. Perhaps I should I have broiled it for a few minutes at the end? I served with fresh, steamed broccoli. I can't wait to make this again. I will be adding fresh mushrooms next time around!

Sausage and Sauerkraut Casserole

This is getting 5 stars for ease, taste and surprise factor - I would have never imagined that this would be as delicious as it was!!! Wow. I basically followed the recipe, but I used a regular roll of breakfast sausage, as that was all I had. Also, I only had colby/jack cheese. In addition to the cheese that gets mixed in, I sprinkled more on top. Served with bread. Next time, if I use breakfast sausage, I will be sure to drain it better and get more of the grease off - it was a tad greasy. I can't wait to have leftovers tonight!

Slow-Cooker Posole

So quick and easy as well as very tasty! I was a little short of 2lbs of pork, so I made up for it with chicken breast. Except for that and using more salt, I made as directed. There is no doubt that I will be making this again and double, at that!
