Garlic Mashed Cauliflower

I am sooooo excited about this recipe! Made it with one Laughing Cow cheese wedge instead of cream cheese, but otherwise as written. I can now satisfy my cravings for mashed potatoes without feeling guilty! Will be making on the regular, no doubt. Oh, and my immersion blender worked great; the "potatoes" were the perfect, creamy consistency.

Mexican Lasagna Lite

I have made this twice now and have thoroughly enjoyed it each time! It would be really hard to mess it up. Do be sure to spread beans on tortillas before placing in dish and THEN do the sour cream - it's just easier. I doubled the green chiles, which resulted in EXCELLENT flavor.

This was good, but not great. Perfect recipe for quick, throw-together meal. It was hearty and comforting. However, I highly doubt I will look this recipe up again.

Delicious Ham and Potato Soup

I was very, very, VERY happy with the way this turned out! I had to cut myself off after two bowls! So COMFORTING, quick, easy, and delicious. I didn't change anything about the recipe, but I did *add* 1/3 cup of sliced baby carrots. I see this as a very versatile recipe - the add-ins and substitutions are endless. However, I was so pleased with how the original recipe turned out, I don't know if I want to try it any other way. I will be making this again very soon and will be sure to double the recipe.

Hungarian Mushroom Soup

DE. LISH. Wow, what a classy, elegant soup (if you can call soup those things...). I made the recipe as instructed EXCEPT I only had salted butter, beef broth, and dried parsley (used 2 tsp) on hand. I should have left that tsp of salt out at the end, but it was still wonderful, just a tad bit on the salty side. I can't wait to make this again with chicken broth and a less salt. I think that all of the ingredients worked together well; the amount of dill and lemon was fine for me. Next time, I may add a little garlic to the onions and use different mushrooms. Honestly, I could have eaten the whole thing by myself, but I held back. I have some left for tomorrow. I am anxious to see how it tastes the next day. I am glad that no one in my house is a fan on mushrooms!

Easy Chicken Enchiladas

These were more like baked burritos to me, but tasty nonetheless! I had to make changes based on ingredients on hand - namely the beans (used chili beans with liquid), cream cheese (only had half the amount), and tortillas (Mission jalapeño cheddar as well as Mission herbed spinach - halved them since they are so large; I used a total of 5 tortillas). I added a can of green chiles to the filling mixture. They turned out great! I will make these again. Quick and easy!

Maria's Mexican Rice

This turned out great! Only very minor tweaks were made based on personal preference and ingredients on hand. I was a little worried about "runny" rice, so I decreased the water by about 1/4 cup, When measuring my rice, I didn't measure out exactly a cup - it was just a tad over. I used basmati rice since I have 20lbs of it! I didn't have any onion, so I had to do without, unfortunately. I can't wait to make it again WITH onion! I added some minced garlic with the other spices (about one clove). I will add more next time. I didn't have a serrano on hand, but I had a jalapeno, so I used that. I love the hint of flavor it gave to the rice. I was happy with the results and will be using this recipe again. For me, it was perfect! THANKS!

Taco Pie

What is not to like about this recipe? It is easy, quick, and DELICIOUS! Aside from adding a layer of pinto beans and using a little less sour cream, chips, and cheese, I prepared as instructed. This was a total HIT! I wish I would have made double batch. I topped each serving with a simple taco sauce and black olives.

Magical Egg Salad

I doubled the recipe. I didn't change a thing except for the dill - only used half of the recommended amount (as I am not a huge fan) and didn't add salt (there was already plenty with the steak sauce, mustard and relish). I personally thought that the Dijon was a bit overpowering, so I will definitely use less next time. Good stuff - will be better (for my personal taste, of course) after I make my own additional tweaks.

Moroccan Tagine

I will make this again...and again...and again! Like most other reviewers, I added my own flair. I cooked the chicken, onion, and garlic with about 1 tsp of each: curry, turmeric, cinammon, and cumin. I also added a splash of lemon juice. I didn't have any garbanzo beans, so I used a can of great northern beans. I also didn't have any carrots, so that ingredient was left out. Once all ingredients were together in the pot, I added a dash of ground ginger. This was served over couscous and garnished with chopped cilantro. It looked beautiful and very appetizing; I wish I would have snapped a picture! This will be on my stovetop again soon, although I may tweak the recipe and its ingredients once more to make it extra wonderful.

Lemon Corn and Zucchini

This is the perfect quick side dish! I opted to saute veggies in butter (instead of olive oil), as directed. I love butter and it was so worth the extra fat! In fact, I might use more next time! I had some leftover yellow squash and zucchini, so I used them together. Perhaps this was a little more than 1 small zucchini. For my personal taste, I had to add just a small pinch more of dill and probably another whole teaspoon of lemon juice.

Eggy Veggie Bake

Yum! This gets 5 stars for ease and tastiness! I did everything as directed for the most part, but was sure to drain the water off of the cooked veggies. Oh, and I used 6 eggs instead of egg substitute and added just a bit more cheese to the top. I didn't add the cheese until the very end. I beat the eggs with a little mayo and half and half.

Pork Chops in Red Sauce

Will definitely make again! I used boneless pork chops. I sauteed the onions with fresh mushrooms before adding them to the meat. For the sauce, I added dijon mustard and dried basil. Next time I will double the sauce - it was delicious! I will also use another onion and maybe more mushrooms. The chops were ready a little after one hour in the oven. The smell while they were cooking was heavenly. I could NOT wait to take them out and eat!

Iowa Pork Steak

Wonderful. It made my house smell so good. I sauteed sliced onions and fresh mushrooms in olive oil before adding to the crock pot with the meat. I used a 15 oz can of beef broth instead of the water. The meat was fall-off-the-bone tender and very tasty. Served with butter and parsley egg noodles and green beans. I can't wait to have leftovers tonight!

Rich Italian Sausage and Potato Soup

I am not really a fan of Italian sausage, but I did enjoy this soup. I used spicy sausage and about 3 slices of regular bacon. I would have liked less Italian sausage and more bacon, personally. I julienned the potatoes, used two bouillon cubes and added a little pepper. The julienned potatoes turned out to be a great idea as I could thicken up the soup a bit by crushing them. I will make this again with regular Italian sausage and less, adding more bacon.

Coconut Flan

This turned out perfect, even though I left out the regular milk (oops - was too excited!). I added two teaspoons of coconut extract. I think one would have been enough for my personal taste. This was good, but I still like "original" flan better.

Curry Chicken Salad

A different but tasty chicken salad. Like many others, I also added more curry and much more mayo. I used less celery - only 1 stalk. Should have done two. I think four would have been overkill. We enjoyed this - thank you!

Pepperoncini Beef

Ridiculously simple and amaaazingly delicious!!!! I am not sure if I will ever want to cook a roast any other way now. This made amaaazing sandwiches and amaaaazing quesadillas the next day. Other than adding a large, sliced onion and minced garlic instead of sliced, I didn't do anything different and don't think I ever will. THANK YOU for this amaazing idea!
