Turkey and Quinoa Meatloaf

This was amazing! I used ketchup instead of tom. paste and omitted the hot sauce. I was out of brown sugar so used BBQ sauce on top. If my husband knew this was turkey & quinoa he would not have touched it~so I didn't tell him. He ate two helpings and raved about his leftover sandwich today!

Slow Cooker Adobo Chicken with Bok Choy

Followed the recipe. Served over brown rice. Very Good. Only change I would make is use boneless chicken. May try boneless chicken breasts next time but the thighs added great flavor!!!

Slow Cooker Chicken and Dumplings

Followed recipe with a few exceptions. Used chicken broth instead of water and added a stalk of celery diced. I shredded the chicken before adding the biscuits. The dough took more like 90 mins to get done all the way through and it looked weird until I stired it up. Tasted really good, a little salty from the soup will use low sodium next time.

Pumpkin Cookies V

These were very good. I followed suggestions and made the frosting first. It also helps to take a spoon and make like a thumb print in the cookies when they come out of the oven to hold the frosting. I will use pumpkin pie spice as well as cinnamon the next time for a stronger pumpkin flavor.

Quick and Easy Alfredo Sauce

This was easy & awesome! I only had cream cheese with chives so used that and it sure didn't hurt anything. Also added some fresh mushrooms that I sauteed first in a little butter and then added at the end. I used fat free 1/2 & 1/2 in an effort to cut calories. Alfredo isn't suppose to be terribly healthy!

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

This is actually 3 recipes. The pasta & zucchini recipes were pretty blah. But, the chicken dish was delicious. Will definitely make again and serve with roasted veggies or rice. It is important to use fresh cilantro and to use a blender. I tried the food processor and it wasn't creamy so had to mess up the blender too!

Herb Roasted Pork

I made this for 2 with a small 2pound roast. Didn't change anything except I roasted at 325' for 1 1/2 hrs. Do not over cook! This was delicious! Moist & tasty!

Chicken and Broccoli Stroganoff over Whole Wheat Pasta

I followed this recipe exactly and it was VERY bland. Even with the red pepper. Chicken broth would have been better than wine and cream or 1/2&1/2 would have been better than sour cream. Won't make again.

No-Noodle Zucchini Lasagna

I love this recipe. I have made it many times. Skip the salt on zucchini step and don't add any water to the sauce. The zucchini will add the moisture you need. I also add a clove or two of garlic minced, with the onion to the sauce. Great with Italian sausage instead of ground beef. If you like this recipe, check out "Low Carb Luxury.Com".

Easy Pork Roast

Very good recipe for an inexpensive cut of meat. I didn't have any shallots but that didn't seem to hurt the recipe. I served it with white rice. Good meal on a cold night!

Make Ahead Breakfast Casserole

Great casserole! I used plain sausage, potato soup & fresh mushrooms because that was what I had. I also doubled the eggs. Perfect for breakfast, lunch or dinner!

Cheesy Baked Cauliflower

This was really good! I made minor changes. I only steamed the cauliflower for 10-15 mins. I also increased both the mayo & mustard to 1 tablespoon and mixed the parmesan cheese with them. After spreading the mixture on the cauliflower and dotting with butter I placed it in my toaster oven for 30 minutes. Yum!
