This is a wonderful, family friendly, healthy dish! I was concerned about adding beer to the recipe, but it gave it a little something extra my husband just couldn't put his finger on. Ironic, since it was his beer. We ate ours with a dollop of sour cream and a few minced onions. For leftovers the next day, I added some white rice and strained the extra broth so it wouldn't be too soupy and make burritos. The reincarnation as a burrito was received heartily by my sons and husband. I love this recipe. It makes me appear to be a better cook than I am.
