I am eating my 4th batch and have now perfected the technique! Yes, use the gourmet corn. Yes, put in the 3 kernels and then the sugar once they pop. After about 15-20 secs add the corn kernels. Keep stirring the Whirley Pop until you hear the popping almost over. Remove from heat and add some salt to machine and stir a bit. I have a smooth cooktop and medium heat is just right. I burned the first batch after cooking it over med-high. Using the magic eraser cleaned my pot beautifully after I had soaked it all night and tried baking soda to scrub it off. I AM ADDICTED TO THIS STUFF, by the way...
