Pesto with Arugula

This is really, really good. I left out the black olives and used pecans instead of pine nuts (it's what I had), also used extra garlic. It does have a bite to it. I made a pesto pasta salad with shrimp and asparagus, adding cheese to the pasta instead of the sauce. Tonight is pesto pizza. If there's any left (it makes quite a bit) I will freeze it for later use. Yummmm.

Tomato Pesto Batter Bread

This is really awesome bread. I've made it a couple of times now, following the recipe exactly. It really isn't a batter, but a regular bread dough, so I use my KitchenAid and dough hook as I would any other bread. The first time I used the recipe I made pizza dough out of it...SO GOOD!

Mama's Asian Chicken and Rice

This was really yummy. I chopped half an onion and a whole red bell pepper and sauteed with the chicken. Next time I'll add even more veggies. Broccoli would be good too! My VERY picky 16 yr old daughter scarfed it down. :)

Ginger Glazed Mahi Mahi

Really, Really good. I made it exactly as written, using only 1-2 tsp of oil in a non-stick pan to sautee. Served with steamed green beans and coconut rice. Everyone loved it. Yum!

Valentino's Pizza Crust

This was fantastic. I followed recipe exactly, and added dried thyme, basil and oregano to dough. I let it rise longer than suggested (got distracted) and pre-baked for 8 minutes before adding toppings, then baked for 15 minutes with toppings. It was thick, chewy and wonderful. Picky 16 yr old said the crust was the best part of the pizza! I especially liked that it didn't take hours before we could eat!

Pork and Sauerkraut Stew

I made this for dinner tonight. I diced half an onion and 3 potatoes, cooked in 1 TBSP oil with a good sized "dollop" of pressed garlic, added 4 boneless pork loin chops, cubed, just over a teaspoon of caraway seeds, then added one can of sauerkraut with apples and half a can of water. Simmered on the stove for 45 minutes or so. It smelled wonderful and tasted even better. :)

Rosemary Herb Bread

I used all dried herbs in a pinch. Started it in the bread machine, ended it in the oven. It made my house smell like Macaroni Grill. :)

Chipotle Chicken Soup

Awesome soup. I boiled 2 frozen chicken breasts, used the broth from that, used a large can of pureed tomatoes because I didn't have two canned of diced, and used about half a can of chipotles with sauce I had leftover in the fridge, simply running them thru a small food processor. Had the cilantro on the side (son is allergic) Very good, nice and spicy!

Pumpkin Apple Streusel Muffins

These totally satisfied my pumpkin craving. I used whole wheat flour, added some oat bran and halved the sugar and oil. The batter was thick (probably the oat bran) so I added some apple cider. Also skipped the streusel topping. Yum.

Pasta Pomodoro

This was great. I modified it a bit to accommodate my son-in-law, who doesn't like spaghetti type noodles. I made it with whole wheat penne and added some pepper strips and cut up chicken chunks with the onion and garlic. Was a little spicy, perfect for me, not so much for the others, so if you don't like spicy, eliminate or reduce the red pepper flakes.

Campfire Foil Packs

Perfect camping food. I cut up the veggies ahead of time, and take a bag of frozen boneless/skinless chicken (usually thighs). Everyone puts what they want, along with fresh rosemary and slices of lemons. The bag of frozen chicken is no muss-no fuss in the ice chest, and then I don't worry so much about thawed chicken getting too warm if the ice is melting.
