Buttermilk Pancakes II

These are fantastic!!! I doubt I'll ever try any other pancake recipe! When you blend them all together, they foam somewhat- you know they'll be light & fluffy. Like it says,don't overmix- it will be lumpy. Not to worry! They come ouy perfect. Use 350 degrees on your griddle. Watch carefully! Thank you so much for the terrific recipe!!!

Bill's Blue Cheese Dressing

Provincial Tomatoes

I cut the topping ingredients in half & still had too much. I also used olive oil Pam to spray the tomato slices before & after broiling. Very healthy & delicious!

Awesome Korean Steak

Really really good! I found a 1 pound piece of Laura's beef tenderloin. I put it in the freezer for about 1 hour, & then sliced thinly. I halved the recipe & I only had time to marinate for about 6 hours. I saute'd for the full 10 minutes- this will make it nice & brown & the sauce to reduce. We just ate it plain- no rice. Thanks for the great recipe!

Lisa's Chocolate Chocolate Chip Cake

I'm sure this recipe will be great as is, but I decided to play around a bit! Instead of chocolate pudding, I used the new creamy orange Jello pudding. I also subbed Grand Marnier for 1/2 of the oil! YUM!!! I had about 1 1/2 cups of mini chips, so I just dumped them all in. 50 minutes at between 325 & 350 degrees was perfect. The flour Pam worked great - I let it cool for 15 minutes on a rack & then turned out. Put the cake cover on while cooling- then sprinkled on powdered sugar. (had to wipe out excess moisture from the cake cover) Everyone loved it at the Father's Day get-together!

Cranberry BBQ Chicken

Great- whole family loved it! I made it easier by not browning the chicken first- I just put it in the pan & poured the mixture of cranberry sauce & BBQ sauce over. (omitting onion & celery) Covered with foil the first half of baking time. No need to mess with basting. Be careful choosing BBQ sauce- mine was a little spicy. Thanks for submitting!

Chocolate Cherry Cake III

YUM!!! I think I overcooked the icing a bit, however. I don't think you should try to let it come to a boil- just simmer for 2 minutes. (When I tried to spread the icing, it was already setting up like fudge & was difficult to spread over the whole cake.) That said, it was wonderful!!! NOTE: made this again recently. Tried blending the cherry pie filling, eggs, & extract first (in my blender)- then mixing that into the cake mix. Worked great! This time I did not cook the icing long enough!!! (go figure) But STILL yum........

Stuffed Peppers

This turned out better than I thought it would! I was hesitant not to parboil the peppers, but I wanted to give the "cover with foil" method a shot! (we like tender peppers) I used instant brown rice which I cooked in the microwave. I also used a mixture of green, yellow, red & orange bell peppers! (they were on sale at Kroger) What a beautiful arrangement. Making the recipe as is with foil on top worked great. My only minor gripe is that there was no sauce to spoon over. (the topping stayed on top of the peppers- which was fine) Next time I will mix up another can of tomato sauce with a little brown sugar & water & pour this over the top before baking. (in addition to the recipe's topping) I wanted a recipe for under 300 calories- which is why I tried one. Another can of tomato sauce won't add many calories. Thanks so much for this recipe, Bonnie!

Quick Banana Bread

WOW- this is way better than I thought it would be! And SO EASY! I didn't have quite enough walnuts, so I threw in some pecans, too. I used 4 bananas since that is how many I had rotting on my counter! Might want to cover the top loosely with foil the last 15-20 minutes to prevent over-browning. Mine was done in 55 minutes. Be sure to "generously grease bottom of pan" like it says- I sprayed mine pretty good with Pam, but it still stuck a little. Who cares- this bread is truly very good! I will make this again for sure! Thanks Eleanor for another great recipe!

Whole Wheat Maple Quick Bread

This recipe is great- I happened to find maple yogurt at Whole Foods, so I used it! This is healthy & low cal. And surprisingly very moist! Reminds me a bit of gingerbread. All my quick bread recipes need to have foil on the top the last half of the baking time to prevent over-browning. No exception here. Thanks for submitting!

Carnation® Quiche Lorraine

One of THE best quiche recipes! I used real bacon bits (6 T.) & saute'd the onions in a little butter. Don't leave out the nutmeg- it's such a great flavor enhancer! YUM!

Chili Joe's for Kids

I used this because I had all these ingredients. I love making chili & trying new recipes. This is VERY easy & my husband absolutely loved it. He talked about it 3 different times! Yes, it is sweet because of the chili sauce, but it is very good. I only used 1 pound of beef- extra lean, of course! Thanks for submitting!

Currant Jelly Wiener Sauce

Yummy!!! I used a 16oz jar of the jelly from Whole Foods- actually came to 1 1/2 cups. Be sure to drain your lil smokies before dumping them in! Cook at least 4 hours. A very popular dish.

New Year's Day Black-Eyed Peas

Happy New Year! I borrowed from "2BCreative" by soaking overnight (a must in my opinion for dried beans), only using 4 cups of water, adding fresh garlic, & cooking for 1 1/2 hours. I used canned stewed tomatoes whirled in the blender. The result was a tad soupy, but we all had 2 bowls full! Served with my favorite cornbread recipe. I'm happy with this- it will be my standard New Year's recipe from now on!
