Whole Wheat Maple Quick Bread

This recipe is great- I happened to find maple yogurt at Whole Foods, so I used it! This is healthy & low cal. And surprisingly very moist! Reminds me a bit of gingerbread. All my quick bread recipes need to have foil on the top the last half of the baking time to prevent over-browning. No exception here. Thanks for submitting!

Chili I

I love this!!! Omitted sirloin & used 2 lbs. lean gr. beef. Used 1/4 c. brown sugar, 1/2 t. cayenne, & 3 cans kidney beans.(left out chile peppers) Yes, lots of ingredients- but worth it!!!!

Asparagus Quiche

This turned out way better than I anticipated! I used 1 2.8oz package of Oscar Meyer bacon bits. I also saute'd the asparagus with a little butter & garlic instead of steaming. Using 2 shallow pie shells, it was perfect! The tops got a little too brown- next time I will loosely cover with foil the last 10 minutes. My husband & daughter loved it, too. Thanks so much!

Baked Beans II

Yum Yum Eat 'em Up!!! I always cook with those real bacon bits instead of uncooked bacon, so I added 2 T. to the mix. Deeeeelicious!!! Thought my husband was going to eat the whole pan full!

Currant Jelly Wiener Sauce

Yummy!!! I used a 16oz jar of the jelly from Whole Foods- actually came to 1 1/2 cups. Be sure to drain your lil smokies before dumping them in! Cook at least 4 hours. A very popular dish.

Great- used a 3 lb roast, make sure your roast is lean. I also used 1/2 c. brown sugar & cut all fat off- cutting roast in pieces if necessary.

Hot Bean Dip

Love it! I used 1 t. dried cilantro instead of the parsley & reg. onion instead of green onions. (what I had on hand) I also halved the recipe since I was just making it for my family for football watching purposes. Speaking of football, WAY TO GO, LONGHORNS!!! We HOOKED 'EM!!! Vince, we'll miss you....

Clarke Cheesecake Pie

Great- so similar to my Lemon Ice Box Pie recipe. (it has no cream cheese) I used a Nilla wafer pie shell- yummy! I recommend chilling overnight. Simple & everyone loves.

Outrageous Chocolate Chip Cookies

I just made these as written & they are WONDERFUL!!! My favorite part about this cookie is it's texture. Like others have said, they don't spread- which is a MUST in my book! 10 minutes is perfect. Be sure to mix the sugars, butter, PB, egg, & vanilla first- then add the flour mixed with the soda, salt, & oats. Lastly the ch chips. Amazing cookie- thanks so much for submitting!

Baked Teriyaki Chicken

Delish! I looked in my pantry for cornstarch, & realized I was out- subbed flour & it worked fine! Being lazy, I just mixed the marinade & poured over my boneless, skinless breasts. I covered the dish for the first 10 minutes, then baked for 30 more minutes, turning the chicken over every 10 minutes. Came out with a perfect slightly thick glaze. Used a 375 oven & also subbed out 1/3 c. Splenda instead of sugar. Yum!

Lemon Bundt Cake

THE BEST!!! Let cool in pan for 15 minutes. Invert on cake platter & top with a glaze: 1 c. powdered sugar, juice of 1 large lemon, & 1 T. water. (whisk well to get rid of lumps) I use a pastry brush to get all the sides of the cake. So moist & everyone loves it. Try the glaze- you won't be disappointed!

Pecan Pie V

WOW!!! I am not really a pecan pie person- mainly because I don't care too much for corn syrup. My grandmother wanted a pecan pie for Thanksgiving, so this is what I chose. I'm so glad!!! And it cuts beautifully- no runniness. Thank you so much for submitting!

Basic Cream Cheese Frosting

Wonderful. I let the butter & cream cheese sit out for awhile to soften. Then used KitchenAid to blend. Add vanilla, then powdered sugar a little at a time- to avoid lumps! I added some spices to go with the cake: nutneg, cinnamon, & cloves. (I used it with Pumpkin Spice Cake II.) Thanks!

Sugar N Spice Muffins

Yummy! I love cloves- so this looked good to me. The crumb topping doesn't really brown, but not to worry! They ARE done in 20 minutes & are SO good. My little girl ate 2 & my husband ate 4!!! This is one of those perfect recipes with perfect directions. Thanks for submitting!
