Chili Joe's for Kids

Reviewed: Dec. 13, 2005
I used this because I had all these ingredients. I love making chili & trying new recipes. This is VERY easy & my husband absolutely loved it. He talked about it 3 different times! Yes, it is sweet because of the chili sauce, but it is very good. I only used 1 pound of beef- extra lean, of course! Thanks for submitting!

I had been wanting to try this for a long time. Finally did & WOW!!! This is better than I imagined it would be. It DOES taste like pot roast. Couldn't be easier. Used Healthy Request soups. Thanks, Merri!

Turkey Pot Pie II

Reviewed: Nov. 21, 2005
Yum! I used a deep dish pie shell & one of the Pillsbury rolled crusts for the top. I used 2 packages of the Louis Rich pre-cooked chicken chunks- oven roasted. I had a can of mixed veggies, so that's what I used.(drained, of course!) I also added 1/4 t. garlic powder & 1/2 t. poultry seasoning- after reading the reviews. My husband ate half of this in one evening! I only let it cool about 10 minutes, but we were hungry & didn't care if it was "runny"- isn't that how pot pies are supposed to be? Thanks for submitting- so easy & good! Comfort food to be sure.

Mamaw Thelma's Instant Potato Salad

Reviewed: Nov. 19, 2005
I wanted to like this. Flakes never softened. It's a great idea- but next time I would cook the instant potatoes in the microwave like I usually do, then add the mayo, relish, mustard, & onion.

Leek and Onion Vegetable Dip

This is GREAT! Way better than plain onion dip. Try it with Michael Seasons' light potato chips- they're awesome!

Carnation® Quiche Lorraine

Reviewed: Oct. 12, 2005
One of THE best quiche recipes! I used real bacon bits (6 T.) & saute'd the onions in a little butter. Don't leave out the nutmeg- it's such a great flavor enhancer! YUM!

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Oct. 4, 2005
Good stuff!! I baked a tad longer & nuked the butter in the microwave instead of on the stove. Used olive oil spray. Great easy recipe- thanks!

Easy Cream Cheese Danish

Reviewed: Sep. 26, 2005
Like some others, I'm just not that impressed. I baked the bottom crust for 5 minutes like someone suggested. If you are to make this, I would suggest letting the cream cheese come to room temp & thoroughly blend with the sugar, etc. until SMOOTH. (I didn't like the lumps that resulted from merely dicing the cream cheese.)

Lemon Tea Bread

Reviewed: Sep. 26, 2005
I'm bummed out about this bread because it looked BEAUTIFUL out of the oven! However, it's pretty dry. Maybe it would be great if you add a container of lemon yogurt. It's actually pretty good if you heat it up, but I'll just try another recipe. I couldn't see heating up the stove for 1 T. sugar & 1 T. lemon juice either.....

Chicken Nuggets

Reviewed: Sep. 16, 2005
WOW- much better than I anticipated- although next time I will reduce the salt. The batter looked too thin to me, but actually came out great. Almost reminded me of fish & chips batter. I think they would be better with a little seasoning like onion/garlic powder. Used an electric skillet with about an inch of corn oil. Thanks for submitting!

Whole Wheat Maple Quick Bread

Reviewed: Sep. 13, 2005
This recipe is great- I happened to find maple yogurt at Whole Foods, so I used it! This is healthy & low cal. And surprisingly very moist! Reminds me a bit of gingerbread. All my quick bread recipes need to have foil on the top the last half of the baking time to prevent over-browning. No exception here. Thanks for submitting!

Snappy Green Beans

Reviewed: Sep. 13, 2005
Tasty & healthy- if you make it my way! Saute' onions in a little olive oil. ( I only used half the amount.) Add vinegar, then green beans. Next add 6 T. bacon bits. Heat through- not greasy at all this way. It's tart with the vinegar- we liked it!

Chicken Hurry

Reviewed: Sep. 13, 2005
Very good & oh-so-easy. I made it low carb- using Brown Sugar Twin, Carb Options onion soup mix & LC catsup. Also- boneless chicken breasts- 1 1/2 lbs. & cooked for 45 minutes. Not salty at all.

Quick Banana Bread

Reviewed: Aug. 31, 2005
WOW- this is way better than I thought it would be! And SO EASY! I didn't have quite enough walnuts, so I threw in some pecans, too. I used 4 bananas since that is how many I had rotting on my counter! Might want to cover the top loosely with foil the last 15-20 minutes to prevent over-browning. Mine was done in 55 minutes. Be sure to "generously grease bottom of pan" like it says- I sprayed mine pretty good with Pam, but it still stuck a little. Who cares- this bread is truly very good! I will make this again for sure! Thanks Eleanor for another great recipe!

Stuffed Peppers

Reviewed: Aug. 6, 2005
This turned out better than I thought it would! I was hesitant not to parboil the peppers, but I wanted to give the "cover with foil" method a shot! (we like tender peppers) I used instant brown rice which I cooked in the microwave. I also used a mixture of green, yellow, red & orange bell peppers! (they were on sale at Kroger) What a beautiful arrangement. Making the recipe as is with foil on top worked great. My only minor gripe is that there was no sauce to spoon over. (the topping stayed on top of the peppers- which was fine) Next time I will mix up another can of tomato sauce with a little brown sugar & water & pour this over the top before baking. (in addition to the recipe's topping) I wanted a recipe for under 300 calories- which is why I tried one. Another can of tomato sauce won't add many calories. Thanks so much for this recipe, Bonnie!

Chocolate Cherry Cake III

Reviewed: Aug. 1, 2005
YUM!!! I think I overcooked the icing a bit, however. I don't think you should try to let it come to a boil- just simmer for 2 minutes. (When I tried to spread the icing, it was already setting up like fudge & was difficult to spread over the whole cake.) That said, it was wonderful!!! NOTE: made this again recently. Tried blending the cherry pie filling, eggs, & extract first (in my blender)- then mixing that into the cake mix. Worked great! This time I did not cook the icing long enough!!! (go figure) But STILL yum........

Marinated Flank Steak

Reviewed: Jul. 13, 2005
Good marinade. I think marinating overnight would be best. I also would rather use a different cut of meat- flank steak is just too chewy for me. (even when sliced thin on the diagonal)
